INGREDIENTS 3 bell peppers 1 sweet onion 3-4 bags of riced cauliflower Olive oil 1.25 lb 97% lean ground turkey 2 cloves garlic Salt Pepper Garlic powder Smoked paprika Baby Bella mushroom slices 1 can pinto beans, drained 1 can diced tomatoes Spinach Fat free shredded cheese 10 servings (2 each meal) Plain fat free Greek yogurt Taco seasoning Hot sauce Quest chips or tortilla chips DIRECTIONS 1. Slice peppers & dice onion 2. Microwave riced cauliflower 3. Heat olive oil in medium high heat pan 4. Add ground turkey and garlic. Cook 5. Add bell peppers, onion, mushrooms, salt, pinto beans, diced tomatoes and spinach 6. Stir all a cook for a few minutes, then reduce heat to low 7. Assemble bowl and when serving top with shredded cheese, Greek yogurt, taco seasoning, hot sauce. Mix all and serve over chips. Entire recipe (not including chips)- 2680 calories. 338g protein Makes 5 meals (no chips included) 536 calories each 67g protein each With 2 bags taco quest chips 815 calories 105g protein

I make something similar, except I saute the veggies in a seperate pan to make sure they're cooked thoroughly. Nothing's worse thasn biting into crunchy veggies that are supposed to be tender!

I make this a lot myself. However, I add the taco seasoning in while cooking the turkey. I sometimes add a few small cubed sweet potatoes along with spinach. It is one of my favorites. I love watching your prep meal til told too.

Hey Jeff. Thanks for sharing. I made these from your other video using the basmati rice and they were truly delicious. I think the only thing I could've left off was the Greek yogurt because although it's not sweet, it gave the dish sort of a sweet taste. Otherwise it was to die for. I even made your infamous fruit bowls. So much fun and lots of protein. Time consuming but fun and healthy nonetheless. I'm working on the pineapple cutting skills though. I'm not quite there yet. I found Jeff less than a month ago so I'm just getting started. I'm lactose intolerant and recently was diagnosed with celiac 😢, so I can't eat the dairy and certain other foods 😢 that you use unless it's Lactose free, as well as dairy free. Lactaid makes lactose free ice cream; sour cream... that's a plus. I love those meal prep glass food containers you use. Glad I found your channel you've been an inspiration 😊

How was the cauliflower rice? I made stuffed bell peppers with homemade cauliflower rice once and it tasted bad not a neutral or camouflaged taste at all. I'd appreciate yours opinion of the rice that's the only part I'm concerned about. Save a lot of calories and carbs though.

The real way to the weight is low sugar and look at the portions. Your portions are small. Most people overeat. Some know, others don't know, it adds up.

Its easy to get tuna & ground turkey to taste good. Outside of jazzing them up i dont like either of them like that & i gat tired of eggs. I be real lazy with my high protein meals & after winter gains i keep the calories low. 2 cans of tuna thats a solid 40g of protein. When u saute some jamaican jerk seasoning paste in a little butter with some sweet chilli sauce preferable a no sugar variety or no sugar bbq sauce, then toss in ur drained tuna, so good. To change the flavour profile u can make it a bit south asian by adding ground cumin and some garam masala, hot sauce or chilly flakes or powder. Then add a little cooked pasta or finely diced potatoes if u eat a bit more. U can also use veggies instead of pasta & potatoes or low calorie bread. U can finish filling up with a protein shake. Just some berry of choice with some almond milk and a splash of vanilla. I use unflavored whey protein cause i just dont like artificial fillers in my protein to bulk up the quantity and add unnecessary calories, i like my protein powder pure.

Taking the meat out of the pan then cooking the veggies separate and bring the meat in to mix once the veggies are tender would definitely release more flavor👌🏾

I would sautee the onions, peppers to get some of that carmalization going for deeper flavor. Other than that, I'd eat it. It's close to what I do anyway. You could be crazy and say, breakfast toss an egg on top. Dinner toss it in a torilla. Haha, I'd prob lose my mind though.

Hi Jeff! Please try the frozenGreen Giant Cauliflower Rice. I eat it at least 3-4 times a week. It is the absolute best brand. The texture is perfect, you'd think it is rice. The instructions say to microwave it for 6 minutes, but, 7 minutes is better. I subscribed today; I really do enjoy your videos. I'm so proyd of you.
