Most of the best sushi ingredients in the US are imported from Japan, so you need to pay for that extra taxes + delivering fees as well. These fishes are like gems, I can only imagine how hardand expensive it is to bring them here to the US.

"Hey bro, have you tried Jiro's Suuush in Japan?" It's kinda funny how people are like "you gotta go to Jiro's" instead of saying Sukiyabashi Jiro Honten when referring not only to the official restaurant name, but specifically the flagship that Jiro Ono is known for, well actually it's his first son Yoshikazu that really runs the show, especially during the time Jiro Dreams of Sushi was filmed which that particular topic was focused on as everyone, including the Michelin judges, was expecting Jiro himself to serve them. Also when people are all like "you gotta go, bro." they really don't realize how hard it extremely is that even if one were to hire a reservation service as the restaurant not only only takes reservations in Japanese and if concierges from hotels won't unless if you stay at their extremely expensive hotels (and that's certainly not a guarantee they can get you in), that even that specific service catering to outsiders that speak English primarily rather than Japanese isn't guaranteed to land a spot at "Jiro's, Bro". I know I'm being harsh, yet the people who ironically think I'm a dick for pointing that out, I'm willing to bet that they're hypocritically even larger assholes themselves as they're probably the type that take great offense when trying to teach them proper local etiquette like not to mix wasabi with the soy sauce (or worse, telling them not to rub chopsticks together as doing that is a huge offense in Japanese culture as it implies disrespect and really, it's saying "you have shit chopsticks" which is a huge insult; even Easterners of non-Japanese descent are guilty of this heinous faux pas (not "fox paws")), yet if an Easterner were to cut up a hamburger and eat it with chopsticks, that easily offended asshole would be hypocritically all like "that's not how you fuckin' eat a hamburger!". But otherwise, I do appreciate your love for seafood (really, I acknowledge that you have a better grasp of seafood compared to most Westerners, except the error of confusing octopus when it really was squid, and what you refer to as "whitefish" is probably most likely Aji, Spanish Mackrel, when it's really a silver fish; there's probably more but I'd rather stop here), especially how Westerners have more of an ignorant disdain and avoidance for seafood that's not only extremely delicious, but it is way more healthier than the heavy amount of red meat, let alone the processed crap, they eat which is why the Japanese and Easterners live longer than their Western counterparts.

I envy people that can eat and enjoy seafood. Something about anything from water, I just can't eat. The taste and texture makes dry heave but it looks so good and pisses me off that my mind decided for me that I would not get to enjoy something that so many people obviously get so much enjoyment from. Jiro Sushi is a dream, and I'm just an ordinary American. I have a question that I didn't see/hear covered in this video, please. When I go to sushi places here I will either be given the yellow (nasty, bitter, wood-yuck) or the pink(yeah, bright, sharp, sweet-wood-snap) ginger.... and sometimes if I know the place has yellow, but I like everything else, I'll bring my own pink :D The ginger shown is kind of tan in the lighting of this video. Since Jiro Sushi is the dream goal, how would you compare the ginger offered there to what I am used to? Thanks!

Call them first thing at the beginning of the month to make reservations for the following month, they fill up fast. Plus, if your not Japanese you will be required to come in to the restaurant in person (or pay via wire) to make a down payment of 50% (mainly because when Japanese make a restaurant reservation they show up unless someone dies but visitors routinely don't hold up and the restaurant loses money). Your other option is to stay at a hotel close by in Tokyo and have the hotel make you a reservation. I've been to both Jiro's and his sons and in the end I felt the food was 98% same in quality (for many reasons) so I would aim to hit up the son's as it was much easier to get in and about 10-15% cheaper.

Wife and myself ate at Roppongi and I ate at Jiros in Ginza a previous time with a co-worker. The experience, in my opinion, was a almost identical but I personally enjoyed the Roppongi experience a tad more because it seemed that Takashi and staff were more talkative and warm. If someone were to ask me to recommend a sushi place though I would have to refer them to Yoshinori Tezuka at Matsunozushi I found his sushi just as good but the personal approach to service was above board, and if it matters it is a slight bit friendlier on your wallet, not much though.

No sashimi to start your meal? Maybe a mistake with such a wonderful opportunity facing you? I know a comparable bar in Chiba for less than half the price. The owner is master chef Masayoshi Kazato the head of the World Sushi Skills Institute under the All Japan Sushi Association. He also runs the World Sushi Cup held every Aug in Tokyo. PS being Canadian i appreciated your hockey puck analogy. There is a better way to eat the uni and ikura than the traditional gunkan style. Let me send you a photo? Cheers!

The only thing exotic about it is old man hand sweat, skin flakes, feces and God knows what else is on his hands. Most reputable places use gloves now. The way he massages his sushi he definitely gets grime in that food. Yuck. Glad they lost their Michelin status.
