I've just made the teacakes, they came out of the oven looking absolutely delicious. And tasted even better, I can't believe I made teacakes, that taste better than bought ones. I've followed a lot of your bread recipes, and everytime it's been a successful outcome. I bake bread using your recipe 3 / 4 times a week now, can't remember the last time we bought bread from shop's or supermarkets. Also when you make your own bread you no they contain no preservatives. Cheers John.

I really miss these, living in Australia, the nearest thing to them are hot cross buns, but not really. My first batch were like bricks, but following your recipe i’m in 7th heaven, i’ll probably have to make at least once a week! I’m also diabetic and have been low carb for over a year now - so rationing myself.

Made these today. Did double the amount as there are six of us. Had no lemons so missed the zest out but they are absolutely awesome. I have no mixer so I hand kneaded the dough. There is no comparison to shop bought ones. They are on a whole different level. My daughter said they were the best teacakes she had ever eaten. Thank you John for the effort you make putting these videos together. I bought same weighing machine as you and it is brilliant. I love how you explain the difference between all spice and mixed spice. My calculation was a bit out as I got 17 not 16 but cooks perk that.

Hello form Canada. This year I made strawberry and raspberry jams. I use a product that is sugar free and contains pectin, aspartame and a few other ingredients. This is a no cook freezer jam. It's very simple, just wash and chop the fruit, add the packet of jam mix stir, it quickly becomes a jam. Store in clean containers in the freezer till use, thaw and keep in the fridge. It's very good on toast or over vanilla ice cream or plain yogurt. Love your show, great presentation and tips.

These tea cakes are out of this world served simply with a pot of strong tea and cream. I had them made on a rainy evening and to my surprise me neighbours came over! To be honest mine was not so aesthetically appealing but still were gone in no time...sigh... anyway I had the neighbours see your channel and they got fascinated.Good job!!!

Just made these today. They look beautiful and they were fun to make. This is the first recipe I have ever made that I weighed my ingredients. I’m so used to cups and teaspoon measurements. They were fun to make. It didn’t take too long to raise when my house is at 86°F. They taste very good. If I make them again I’m going to use less allspice. For me the allspice over powered the cinnamon just a bit. I would probably use half the allspice. They are beautiful to look at and nice to eat. Thanks for the recipe.

Toasted Tea-Cakes are possibly my favourite tea time treat but so often shop bought ones are a disappointment. I made these yesterday and they are absolutely wonderful. So light and fluffy, such a tender crumb and so delicious with the spices. I’ve just had one for breakfast and it was epic! They are absolutely mahoosive though....next time I think I will make 12 smaller ones so that they are a bit more “snack size”! Thank you John for all your fantastic recipes and techniques.

THANK YOU JOHN! I baked these yesterday. and it's a really really good recipe. The little bit of lemon zest works great - as does the Allspice. The only thing I changed was to divide the dough into 9 balls rather than 8... which im glad I did, because otherwise i think they would have been a bit to big to fit in the toaster!... and it still makes a very generously sized (as well as very tasty) tea cake.

Hey John I’m a new viewer I just wanted you to know a jam recipe You can use blueberry, raspberry, blackberries or strawberries, Anyway so choose a berry put them in a pot rinse them then drain water put them on cooker medium heat once they go mushy add 1 table spoon of lemon juice and 2 table spoons of chia seeds stir for few mins then take off heat let it cool down then jar it up and put it in the fridge it’s not as nice but still does the job very healthy :)

John, could you demonstrate how to test the rise on the dough using the finger indentation method? Recipes reference the technique, but I've never seen it explained in video. And, on another note, I have made so many of your recipes. Your technique for sourdough bread is the only technique I will ever use. It is so good and so consistent. Thank you!!

The finger test I don't really use But if you want to try it. stick a finger in if the dough, if the dough springs back quickly it's not quite ready, if the dent stays there it's over proofed, if the dent slowly comes back but not all the way, it's ready. But tbh I've never really found it consistent or useful to the home baker. I don’t do the finger test either but just wanted a way to better understand it. But your explanation gives me a much better idea of what they are talking about. Hi John, I love to bake but have only recently started making bread and doughs so I treated myself to a stand mixer (what else can you treat yourself to during lockdown!) I am so please to have found your channel as your simple but precise instructions and guidance are the best I have come across. I followed this recipe to the letter by pausing and following the video and the tea cakes came out beautifully. Thank you. I may divide the dough into 10 next time as they were like monsters lol.
