Fried Sesame Balls | Fried Glutinous Rice Balls | Ma Tuan
1. Sweet azuki bean paste 60g (divide into 10 pieces)
2. Dough (yield about 180g, divide into 10 pieces, 18g/piece)
wheat starch 18g (2 tablespoons)
boiling water 1 tablespoon
sugar 2 tablespoons
lard 1 teaspoon
glutinous rice flour 72g (8 tablespoons / 0.5 cup)
room-temperature water 50ml
3. Oil for deep-fry
To make big balls, pair 24g dough with 8g bean paste.

豆沙馅 60克 (分成10份, 每个6克)
糯米面团 (得180克,分成10份, 每个18克)
澄粉 18克 (2大勺)
糯米粉 72克 (8大勺 / 0.5杯)
白糖 2大勺
猪油 (或蔬菜油) 1小勺
开水 1大勺
室温水 50毫升 (3大勺 + 1小勺)
油 (用来炸麻球) 适量
如果想做大一点的麻球, 可以用24克糯米面团 包 8克豆沙馅。炸好的麻球约5厘米直径。
