For milk kefir. You will ferment in milk, the freshest you can find, the equivalent of one tablespoon of kefir grains to 500 ml of milk. Ferment at room temperature for 24 h and then store in refrigerator for consumption. Water kefir should be fermented in brown sugar water at room temperature for 24 h. The ratio is 1 tablespoon kefir grains / 500 ml water / 1 tablespoon brown sugar. It can ferment for more days. In that case put a little more sugar. Refrigerate and consume anyway with a pinch of salt or flavored with fruits etc. It is possible to make the second fermentation with fruit juice, let it ferment for 1 or 2 days at room temperature and then serve it cold. It is very gaseous and delicious!
