I love your recipes and your enthusiasm. It's great to see a UK based collection of keto recipes with ingredients I recognise from here. I'm currently learning to adapt some favourite international meals to keto, and when it comes to coconut milk in our Asian meals, I sit my cans in a bowl of warm (not boiling) water for a while before opening. It's all smooth and lovely when it comes out, no mixing required. Thanks for all your advice and the delicious recipes.

Thanks for watching! I don't think xanthan gum would work... or you would need a very large amount, which would make the mousse very high in carbs.

Whole chia seeds will add a bit of texture, but yes you could use milled seeds if you prefer :)

Where did you get coconut milk from please, Aldi have dropped their coconut content to 62% as you mentioned and seem constantly out of stock, they have also eliminated linseeds, and quinoa from their stocks permanently! So looking for other stockists. Thanks

Tried tonight but didn’t have any orange flavouring added some vanilla instead but it wasn’t good sadly. Strong taste of the coconut milk which isn’t pleasant. Seems like defo need orange or mint or something strong to disguises the taste
