Hi Foodies, today I am back with a KETO Coconut Ice Cream. This is one of the very first snack I have had since I have been on my KETO diet, it satisfies my cravings and tastes so good. I swear KETO doesn't have to be boring. I used 1/4 cup of stevia in this recipe, but you may add more if you prefer a sweeter ice cream. Try this recipe, make it your own and let me know what you did differently. Thank you for viewing.

I made this last week and guest what. It soooooo gooood, heavenly flavorful coconut ice cream. 😊 simple and yet very delicious. I love it😍 and today I'm gonna make another batch.anyway Thank u so much.

I have a question...what was the purpose of cooking it, as your oil was already melted and there are no egg yolks? I am curious; I am not much of a cook.

Simple, perfect recipe for keto starters like myself! I replaced coconut oil with MCT oil tho :( hope it tastes good still!! Imma putting it in the fridge♡ thank you so much for sharing your awesome recipe!!

Ingredients used 2 Tbsp Coconut Oil 1 Can Coconut Milk 1 Box Heavy Whipping Cream 1/4 Cup Stevia 1 Tsp Cinnamon 1/8 Tsp Himalayan Pink Salt 2 Tsp Vanilla Essence

1/4 cup of Stevia equals how much Swerve? I’ve looked at conversions online and it doesn’t seem right?? Was it really Stevia 1/4 cup?

I am hoping to make this soon so I looked up various sweeteners. 1/4 cup swerve DOES look right and is comparable to other recipes or 2-4 Tbsp of various spoonable sweeteners, depending on YOUR taste preference ;-D

Love to try this but being Irish and not American I have no idea what a "box of heavy cream" is....please can you tell me what the quantity is...thank you.

We tend to call it double cream in the UK

I googled the "box" that she used, and the quantity is 236 ml or 1 cup.

Won’t the glass crack if left longer in freezer? Some other container maybe to store leftover ice cream

By not transferring to a blender aren't you missing a crucial step of whipping air into it? That texture did not look good. Has anyone tried putting this recipe in a blender?

At the very beginning the recipe called for 1 8 oz container of HWC. Look

As I didn’t know the volume of cream, maybe I didn’t use enough. The packet looked about 250 mls. My icecream was awful. So icey that there was no enjoyment in eating it. I beat it a second time when it was semi frozen, but it was not enjoyable.

When you are not using an ice cream machine you should take it out every 30 mins. and blend again for about 2 minutes. Do this for about 5-6 hours to help break up the ice crystals that are going to form. i use this method all the time when making my home made mango sorbet and it's better than that expensive brand!
