You eat a lot of large intact veg. If anyone watching struggles with the flavour of vegetables like I do, I strongly recommend buying riced veg or cutting up lots of different things very finely. Then use strong flavoured things that you do like to mask the flavours you don't. For example I use garlic, sun dried tomatoes, mushrooms and herbs to allow me to eat cauliflower, broccoli, carrots and cabbage which I hate on their own. Most of my meals are medleys and take no time at all to cook. I keep the freezer stocked with everything I might want already cut and ready to throw in together. My grains are pre cooked and waiting in the fridge. I use a high sided non-stick frying pan and use a little water to break down the riced veg and get the flavours mixed. When all the water is gone the food is ready.

You mentioned using acorn squash as the starch. DH and I are both diabetic and have tried keto, but find it very difficult to stick to. I've been talking to him about you guys and my tactic most recently is "you can't argue with their results." Fortunately, he's willing to give it a go. We're actually doing a trial of being vegan, WFPB for the next couple weeks. We do see how this "reset" would be helpful. I was wondering, because blood sugars are a concern, could this be done with a non-starch base like zucchini? Also, was their anything either of you had trouble giving up (I think I've asked this before lol)? His struggle would be cheese. Thanks.

You need to read Dr. Neil Barnard's book on diabetes. Your problem is not starches...your body needs them. Your problem is fats. Please look into it.

Thanks to both of you for your inspiration! I’m at the beginning of my transition to plant based. I’m down to about 98% animal free food in my home. I live alone with my dog and it really does help to be able to bring only in my home what is actually good for me. Been testing out a lot of vegan recipes and truthfully have been blown away by how yummy they are! I’ve been on about every diet out there. This truly different. Thank you for all the inspiration! I'm age 62 with metabolic disorder....type 2 diabetes, I am on meds but not insulin. Nutritarian eating is going to work for me. I need to lose over 100 pounds! So far I am lucky that my health is OK, blood work is good, etc. getting the weight off will be so awesome! Thanks for being there and sharing your success! I love your grocery finds.

@@ladyfae4797 I have lost 50 pounds since July 2019! I have stayed very faithful to plant based eating, especially at home. There are no bad or cheat foods in the house. I had to travel a few times prior to the pandemic and I did the best I could. I am off the medicine for type 2 diabetes and I hope to get off a low dose blood pressure medicine and a statin drug. I haven't wanted to go to the lab for blood work at the current time! I will go before my next Dr. appointment in September, I know I will have lost more weight so things will keep improving . Read as much as you can about WFPB, watch videos and movies about planted based eating and follow people like the Krocks to stay inspired! I subscribe to the Forks over Knives magazine and Naked Food magazine, both are inspiring and helpful and it's fun to get something in the mail to keep you on track! Here's to being healthy for the rest of your life!!!

I've already been able to reduce my blood pressure medication which is very encouraging. I feel like a woman on a mission 😄 just trying to learn all I can. The app "daily dozen" by Dr Greger has truly kept me on track. Thanks for all the information, I will definitely check those out. There are so many components to metabolic syndrome but I honestly believe this way of life is best way to reverse it all. Again best of luck on your journey! I just got in some fruit and made a batch of Japanese sweet potatoes, so have to finish them up first :o) I am 60 lbs. lighter than I was 5 years' ago when I retired. I was a full-blown sugar addict. I now am eating whole foods, plant-based only, no dairy. My biggest problem is that I can be a binge eater. When I am stressed or feel anxious I tend to EAT, EAT, and EAT. My stomach doesn't seem to have a bottom!!! I can go through a whole bag of "healthy" sweet potato chips or eat several bananas in a row. I am hoping that Mary's Mini will help me stop eating when not hungry and stop the sweet feelings when I am stressed. You guys have given me so much hope! I'm almost 74 years' old, weigh 125 lbs. and am 5' 1", but still have a "spare tire" around my stomach from the weight I used to carry. I still feel that I could go down another size (size 10 now, but used to be a size 20). I hope this adventure will help me with the need to eat all the time. You two are the cutest couple and I love how you complete each other. God bless you and your sweet doggies!

I'm craving hashbrowns now lol! What good ideas! I make a potato soup with just potatoes, onions, garlic, salt and pepper and veggie broth. Cook everything down and then use the immersion blender to puree it. I like mine really smooth, but you could blend less if you want more chunks of potato. Can't wait to see what else you guys come up with!

I just watched Nutmeg Notebook's video on the cauliflower "Alfredo" sauce and I think everything on the ingredient list is compliant and sounds like something great to put on a potato!

One of my favorite meals is a huge salad with several different kinds of greens and maybe some cucumber or tomatoes, and roasted diced potatoes, just 15 or 20 minutes out of the oven; still warm but not so hot that the potatoes wilt the greens. With a fat-free vinaigrette with mustard--YUM! I enjoyed seeing your progress through this. Thanks For Posting : )

Oh my gosh, Jessica....my husband and I love your potato/spinach idea. Actually, last night we had some leftover steamed potatoes. I heated them up, sliced in little rounds (in the oven) and we put them on chopped spinach. Then topped it with either homemade hummus or Trader Joe’s Cashew Fiesta Dip, and on top of that, a sprinkling of nutritional yeast. We both couldn’t get enough. So, tonight, I steamed some red potatoes in our instant pot. I’m just happy fixing it like we did last night. But my husband went crazy and made his into potato salad in a bowl: adding tomatoes, olives, pickles, & mustard, including the things we used last night. Next time I’m sure he’ll add more stuff. Anyway, thanks guys for your great ideas. We love your show...you’re so fun and real!

These are some great ideas. I'm on day 5 of my very first Mary's Mini. I had chosen rice as my starch. Next time I will be doing potatoes, and will be taking on your ideas. I think you two can add parts of your normal salads - minus the beans to satisfy your taste for salad. I’ve been steaming kale and cabbage (green and red) in my Instant Pot with some crushed red pepper flakes. Soooo delicious with Griddler hash browns! I think you’d like it. Thanks guys, you’ve inspired me to do a Mary’s Mini. I’ve been doing WFPB SOS free for almost 3 years. I kind of fell off my routine lately, eating a little junkier than usual, meaning peanut butter and rice cakes and Larabars, things like that. It’s so hot in California right now, I just don’t feel like being in the kitchen. I want to do the mini to kind of reset my tastebuds and lose a few pounds. It looks pretty easy compared to other things I’ve done and I’m looking forward to it.

You may already be familiar with this, but if you like crispy potatoes/fries there’s a way you can do that without oil. Just chop them into chunks or steak fries, and par boil them for just a few minutes. After you boil them, shake them up with whatever seasonings (and some cornstarch if you want them extra crispy) you like until the outside of the potatoes gets a little craggy and banged up. After tossing them about, you can then put them into the air fryer or oven like you normally would. All the banged up bits get extra crispy snd yummy. 😊

I've been on the potato diet and have been loving it. First week down and five lbs lighter. I have found such creative ways to make all the different types of potatoes there are. Duchess potatoes are AMAZING. Take left over mashed, pipe onto parchment paper and cook at 450 for 20-30 minutes. Very very tasty

Hey guys, I love your videos! Jessica, you had mentioned that you wanted something sweet. I know you wanted to originally stick to Russet potatoes but sometimes I will bake a whole bag of sweet potatoes, take em out of the oven then let them cool down in a paper bag. After they cool down, they store well in the fridge for days and are great for quick sweet and savory recipes. If you mash up the flesh and put some pumpkin spice on them it is quite like pumpkin pie when the texture is just right and it's good both warm and cold. Of course it's even better with a drizzle of maple syrup and some chopped walnuts or pecans and a glass of almond milk but that is just another thing to look forward to. Maybe a drizzle of maple syrup is OK since some of the approved condiments have sugar in them.

No need to respond. Yes! The potato puff recipe, please. I’m going to try it today. I’ll just make something up. I made some cheese sauce out of a cooked potato, water, garlic and onion powder, Dijon mustard, and nutritional yeast. It wasn’t bad. I also sprout a lot of seeds, like broccoli, kale, collards, etc. all are available in quantities for sprouting. I buy on line from The Sprout People. Sprouts have more nutrients per volume than mature plants. The Sprout People are on KZbin with instructional videos. Mary’s Mini rocks! Thanks for posting all the food on Instagram. Potato ball puff recipe for sure, um also spinach/kale and potatoes is definitely a delicious combo I am right there with you Jessica!! And if you want to join Brian on his Indian flavor kick try the Vegan Palak Aloo, my local Indian restaurant has a delicious one and I hope you can find something in MO. Might have to wait til your off the Mary’s mini I’m not sure how strict you need to be, but like you said it keeps you thankful for the things you can’t have and gives you a taste for new things. I feel like it also preps you for when you are at a restaurant and the only options are steamed veggies and plain baked potato or random plain kids menu pasta or something similar. I’m a sucker for Panda Express bowl with rice and power greens with Chile sauce!

Can you have 'gravy' with the potatoes? Can I have cooked cabbage?? What about 'Bacos' as a flavoring? Here in Holland we mash the potatoes with onions and carrots (or kale or sauerkraut) together and call it Hutspot. Would this be allowed in Mary's mini? 🌹

No bacos if they are bacon. You can have one starch. They chose potatoes. Then you can have non starchy vegetables. You can use condiments like salsa,mustard, ketchup etc. No fruit. This is for ten days only.

My training for my announcer voice came from 2 years essentially running a small radio station. I was forced to record a ton of promos and commercials out of necessity. From that, I just naturally learned how to voice act and do voice over work. I still use it at my current job but not as much.😀

You can improve a baked potato with home made sauerkraut (which tends to be more sour than the more salty commercially available one). You can also try a taragon soup: 1 onion, 1 carrot, 1 celery stick, a ton of potatoes, when they're all boiled and the heat is off, add some finely chopped parsley, dill and taragon. Lettuce soup: to your pot of water, add chopped onion, after it's boiled add chopped lettuce - it will be done very fast - at which point add a cup or 2 of mashed potatoes (or cheeze sauce), heat off, add a lot of minced garlic (to taste), some vinegar and a bit of liquid smoke. French onion soup (although, I'm not sure this would still be compliant): caramelize a ton of onion in your oven resistant wok: let it stick for a bit, add a bit of water to deglaze, repeat until you're bored, at which point stick the wok in the oven for 30-40 minutes, get it out and add water to deglaze (to taste) and serve with a lot of cheeze sauce. What I would love to see videos of are the potato puffs, the twice baked potato (don't worry if you're still tweaking your spices, they're to taste, anyway), the curried veggies and the mustard mashed potatoes. And the ones that I forgot to ask about, but I cannot rewatch b/c there's construction right outside my window... Thank you - love your channel (and you forgot about what's his name - again) :)

I love mashed potato with onion powder, garlic powder and fresh chives with mushroom gravy. I also make a variation on Bombay potatoes, so delicious. Good luck finding new ways to love your veggies. I make loads of vegan friendly Indian food, my spice cupboard makes for some insanely good food.

So helpful. I saw the post just below and realized I could try mashed potatoes coupled with raw fermented veggies I make. Been so busy with plant based recipes been forgetting ferment. I made arugula based salad with some salsa. Reheated potato on top with spices and it was tasty.

Inspired to try this. Maintaining a 100 plus pound weight loss over 20 years but too many artificially sweetened treats have crept in, too many processed low fat dressings, and menopause is TOUGH on maintenance. It's a while new world. Thanks for the inspiration.

I'm curious if you were also doing any particular excercises/physical activities or if you were simply been "religiously" sticking to the diets. Have you been working through the Mary McDougall Cookbook on your Mary's Mini? Jane and Anne Esselstyne do a cooking show and there is so much I've learned to work in more Kale in my day, like having it steamed and cold in the fridge and when I need a snack, I reach for the Kale and have it with a bit of balsamic vinegar, garlic powder and Mrs. Dash basic and Chipotle and it is an amazing snack. It is fat-free of course. I love your idea of spinach and mashed potatoes, sounds FAB!

For your sweet craving, have you tried purple sweet potatoes? I'm not sure if they have those where you live, but they are so sweet. If not, you could roast a regular sweet potato and refrigerate it as a sweet treat. Roasted carrots are sweet as well. Roasting really brings out the natural sugars.

If you're looking for another sauce to try, I've heard great things about the Green Dragon hot sauce from Trader Joe's. Sweet chili sauce on oven fries is delicious too!

My mother was German and she made a great potato salad with onions and vinegar, etc.. She would serve it warm. Leftovers were cold, delicious either way.

When you boil potatoes save your potato water and use it to thicken and moisten you mashed potatoes. Then save the rest in frig to use for sautéing. Sometimes I boil carrots, hunks of cabbage, celery and broccoli with the potatoes and use the water as my veggie broth. 🥰

Krocks In The Kitchen Me too!!! Loved his music from the beginning with Matchbox 20 and then his solo work. Sidewalk Angels took it to a whole new love and healthy 😉 obsession with him! He is absolutely one of my hero’s too! Seen him every year for the past 3 here in Portland, Oregon.
