I discovered your recipes whilst shielding during the pandemic. We were avoiding eating out or having any unnecessary deliveries. We have since had curry's at restaurants nearby in Blackburn, but none compare to ones I have made at home with your recipes. My husband Adam and I have both agreed the only restaurant we will visit for a curry now is yours. Nothing wrong with that at all. Everyone has their own favourite tastes and preferences. Whether people are saying to "add abit of that" or "subtract abit of this", recipes should only be treated as a base, where the chef can decide to do what ever they want with it. :) I mean no hate. Only to say that food is very subjective, especially when using very pungent ingredients like garlic and spice

The restaurant is in Alsager in Cheshire, 30 seconds from my apartment. Me and my mate were regular customers of his about 10-15 years ago before he opened "Latifs", the old restaurant was called "Indian Spice" as was just down the road from the current restaurant. The old restaurant is now a pub "Ey up duck".

Burning question: do you know the varietals of green and red chillis you use in your recipes? The closest I get in the States is Pusa Jwala. But nowhere seems to sell the specific “green chilli” used in Indian dishes.

The green chillies in paste or the crushed green chillies are basically thin skinned and very spicy one. One point in the spectrum is fleshy but less hot (Bell pepper) in the middle something like a halepino and other end thin skinned but hot ones(like Thai chilli) . If u break one of them u can smell spicy fragrance not just hot while eating. If u just want heat while eating go for dried red chilli powder

Don’t worry dude, it’s essentially his garlic and ginger mix - he’s covered it on his channel. Essentially, a cup of garlic, cup of ginger, handful of coriander stalks (leaves he kept for garnish) and a green pepper, all blitzed and blended with water added. But, could easily get by with minced garlic and minced ginger.
