Hello All
I hope this recipe video finds you all safe and well, this week it's a cake, a lovely gluten free cake, lemon polenta...yum!
I've put the ingredients below in case you want to give it a go, it's super easy and oh so worth it. It makes 12 decent pieces and each slice of cake will be around 364 calories.
Ingredients
3 large eggs
1.5 tsp baking power
zest of 2 lemons
100g/3.5oz of polenta (cornmeal)
200g/7oz caster sugar
200g/7oz softened butter
200g/7oz ground almonds
125g/4.5oz icing sugar
Juice of 2 lemons
Preheat your oven to 180c | 160c Fan | Gas mark 4 | 350f

This is a lovely recipe. Nigella also has a recipe for a Clementine cake which is gluten free. Have you tried it? It's in How To Eat. You boil the clementines to make a pulp. I often make it at Christmas time x

Hi Kate. Your cake looks delicious. I make something similar and have substituted lemon for lime and it’s amazing. I have exactly the same heart cake tester as you. I’ve had it for years also. Funny as I live all the way on the other side of the world to you in Sydney, Australia. 😊

This looks absolutely delicious! I don't bake very much because it's only me and Steve. And I'm the one with a real sweet tooth. Do you think this would freeze well? Jess reminds me what great 'helpers' my own dogs are when I'm cooking 💕. Be safe and well☀️

thank you so much for the video! I have done it but the texture rough - it was like biting on sand, the polenta was too coarse! can you tell me what kind or make of polenta you used?

Hi, can I not add ground almonds? I don’t like the taste and I am not sure if it will taste like almonds

Hi, it would be difficult without the nuts but if it's just almonds you don't like you could use any ground nuts. Hope that helps

I have just made 'lemon polenta cakes' using identical ingredients and they turned out very crumbly! They weren't dry, as there was so much butter in the mix that it prevents them feeling dry, but just didn't hang together well at all - and they were gritty, as the polenta hadn't cooked properly. I am struggling to see where the liquid comes from in these gluten-free recipes to actually allow the fine cornmeal to cook - the polenta meal I use absorbs more than four times its volume in water, so for a cup of polenta I need 4.25 cups of water to cook it on the stovetop. How is it meant to cook with only eggs, butter and a little lemon juice surrounding it?

Hi I'm sorry it didn't work out for you. I've honestly never had any issues with this recipe. I'm using the juice of 2 lemons so I guess it depends how big they are. Gluten free bakes with or without polenta do tend to be more crumbly but can still be delicious. Good luck and thanks for your comment.

Not a fan of lemon. No biggie. Lol Lemon bars, lemon chiffon pies, lemon wedges for anything....just not a fan. Fan of yours though, so watched and liked! Lol

This cake looks so nice Kate. Nigella also has a recipe for a gluten free Clementine cake, which I've made, and it is delicious. www.nigella.com/recipes/clementine-cake I really hope you'll share the Bolognaise recipe. It's my favourite thing to eat and I love seeing how other people make theirs 🙂
