Hi, Elliott! Those lemon rolls look amazing! I love the homemade lemon curd in the middle, along with the sprinkling of lemon zest on top. I think that letting the frosting crust up a bit in the fridge is a good idea: my cakes taste better, imo, once a slight crust has formed on the outside of the frosting. Great minds think alike, haha!
