你想太多了！ 不浪費可以吃的部分，不是只有台灣人的觀念而已，而是所有人都有。 每個國家在食物不豐盛的年代，都有物盡其用的觀念與做法，但越是生活水準高、物資豐富的國家，百姓自然而然會吃「好吃的東西」。 但是屠宰廠商不是傻瓜，這些內臟、骨頭也是錢買來的，價格高的肉賣給人吃，價格低的肉與內臟賣給寵物罐頭廠商，骨頭也有飼料商收購。 當然還可以將整理好肉品出貨給台灣，包括內臟。

嗯……… 以我個人小時候的經驗， 跟外公外婆住在山上， 肉類主要來源是自己養的雞， 所以通常是重要日子才會殺雞來食用。 而一隻雞可以食用的肉就這麼多， 內臟就會拿去清洗乾淨再做一道重口味的料理。 畢竟在深山裡面，收入不穩定， 手上只要能運用的資源，都不應該被浪費。

First time I ever ate hotpot in Taiwan I didn’t know what the fuss was all about...my shoulders would droop hearing we weren’t going to eat sushi or barbecued food..but over the years it has grown on me and is perfect for the colder months...and how much do Taiwanese love hot pot? well my wife is Taiwanese and there was a typhoon and her family suggested better to order in dominoes pizza :-) an hour later and we are heading out to a hotpot restaurant instead! Ok the main part of typhoon had passed but it was still so windy and huge trees had fallen and blocked parts of the road..but we had a super delicious meal!

Personal opinion: We eat hotpot for both the texture and flavor of ingredients that we put into it. So, sometimes we eat some stuff without dip the sauce to taste the nature favor. But sometimes, we dip sauce with everything we fish up from hotpot to enjoy the texture. It depends on the way of how you enjoy the meat. The Mala hotpot is a way to make the ingredients full of spicy flavor that you could avoid to dip the sauce. But you could still add up more flavor with the sauce. This is the eating culture of Chinese to mix up the flavor with your way or traditional way. But anyway, enjoy it with your favorite method is definitely the right way. Hahahaha
