If anyone wants to follow this recipe, make sure the milk/butter/coca mix is around 60C before adding to the egg/ flour mixture. I failed at this step and all the air in the mixture went away after adding the butter/milk (at about room temp). I went back to look at Lisa’s other videos on making sponge cake, she had pointed out the importance of the temperature of the butter/milk mixture. It has to be at 60ish before adding to the egg mixture. I tried second time and it worked. Just want to share with everyone who plans to make this cake and had no experience like me.

Yes, they are the same. Thickened cream is whipping cream with a little bit gelatin. It must be stored in the fridge.
