These are a game time favorite in our house. My husband, who does not do keto/low carb, loves them.
Low Carb Keto: Easy Game Day Buffalo Chicken Wings
6 lbs- frozen Chicken Wings
1 stick (1/2 cup or 113g) Butter
1 cup (237ml) Hot Sauce (I use Frank's Red Hot)
1 Tbsp (15ml) White Vinegar
Preheat oven to 400 F/ 200 C
Line a large cookie sheet with foil. Be sure that your cookie sheet has a raised edge so that liquids do not drip off the cookie sheet. If you do not have a cookie sheet with a raised edge you can use a large baking dish.
Spread frozen chicken wings evenly on the lined cookie sheet. Bake chicken in a preheated 400 F/ 200 C oven for 45 minutes.
Once chicken has cooked for 45 minutes, remove chicken from the oven. In a large pan, on medium-high heat, melt 1 stick (1/2 cup/113g) of butter. As butter melts, add hot sauce and vinegar. Stir to combine and allow mixture to come to a gentle boil.
As sauce mixture begins to boil, turn off heat and add chicken wings. Pour off the juice from the chicken on the cookie sheet. Coat each piece of chicken with sauce mixture and return the chicken to the cookie sheet. Once all the chicken is coated and back on the cookie sheet, return the chicken to the 400 F/ 200 C oven and bake for another 15 to 20 minutes until chicken is golden and the internal temperature of the chicken is 165F/74 C.
Serve with your favorite ranch or blue cheese dressing and enjoy
