Low Carb Keto Recipe: Sugar Free Marshmallows
Who doesn't love a warm up of Hot Chocolate with Marshmallows. Now you can.
Low Carb Keto Sugar Free Marshmallows
1 cup (237ml) of warm Water, divided
2 1/2 Tbsp (22g) unflavored Gelatine
2/3 cup (120g) Allulose ( you can use Xylitol, Monk Fruit, Erythritol) amzn.to/2XqOm51
2/3 cup (88g) Confectioners Swerve amzn.to/3c0vI9x
1/8 tsp Cream of Tartar
1/8 tsp Salt
1 tsp Vanilla Extract or other flavoring (Peppermint, Orange, etc)
In a cookie sheet or a baking pan, spray with cooking spray, line with parchment paper, and spray parchment paper with baking spray. Set a side.
In a mixing bowl, blend together 1/2 cup water and gelatine until gelatine dissolves. Set a side and allow gelatine to bloom.
In a saucepan mix together 1/2 cup water, allulose, confectioners swerve, cream of tartar, and salt. Heat saucepan over medium-high heat to 238 to 240 F (114 to 116 C).
Once the mixture has heated to temperature, remove from heat and add extract flavoring.
With an electric mixer with a whisk attachment, begin to whisk gelatine mixture. As gelatine mixture whisks, slowly add syrup as gelatine mixture whisks. Whisk at a high speed until mixture is combined and doubles in volume to a 'ribbon" stage.
Once mixture doubles pour mixture into the prepared dish and allow mixture to set up over night to 24 hours. Cut into pieces with a knife or cookie cutter. Sprinkle with confectioners Swerve to keep pieces from sticking together.
