Low Carb/ Keto Recipe "Jello" Desserts

Two Layer "Jello" and "Jello" Mousse
Bottom Layer
2 cups (473 ml) Boiling Water
1/2 cup (76g) low carb keto Sweetener
1 Tbsp (10g) unflavored Gelatin ( I used amzn.to/3wVi5n4 )
1/4 tsp (1ml) Flavoring Extract ( amzn.to/3qkVn5w )
Food Coloring (Optional)
Top Layer
1 1/2 cup (350 ml) Boiling Water
1/2 cup (76g) low carb keto Sweetener
1 Tbsp (10g) unflavored Gelatin
2 cups (473ml) Heavy Whipping Cream
4 oz (120g) softened Cream Cheese
1 Tbsp (13g) low carb keto Sweetener
1/4 tsp (1ml) Flavoring Extract
Food Coloring (Optional)
This layered dessert will work in either individual serving glasses or in a 8 x 8 (or 9x9) serving dish. For slightly faster setting times, chill serving containers in the refrigerator and allow them to chill while preparing dessert.
For the bottom layer, boil water in a saucepan. Once water has come to a rolling boil, remove the pan from the heat. Add unflavored gelatin and sweetener, and stir until they dissolve. Set the gelatin mixture aside and allow to bloom and cool for 3 to 5 minutes.
After allowing the mixture to bloom and cool, add flavoring and food color. Then pour mixture into chilled serving dishes that have been chilling.
Place jello into the refrigerator to chill for 3 to 4 hours until Jello has set.
While the bottom layer is setting, in a large mixing bowl, whip together heavy cream, softened cream cheese, and sweetener with an electric mixer.
Once whipped to a stiff peak, add flavoring and food coloring. While whipping cream mixture, slowly pour in gelatin mixture.
When the bottom layer has set, remove from the refrigerator and pour on the cream mixture. Place the dish back into the refrigerator and allow it to set for another 3 to 4 hours.
Top with sugar free whipped cream and serve.
For 4 servings: Per Serving 543 Calories; 10g Protein; 54g Fat; 43g Total Carbs; 0g Fiber; 5g Net Carbs
~Lemon Lime "Jello"
1 1/2 cup (350 ml) Boiling Water
1/3 cup (60g) low carb keto Sweetener
1 Tbsp (10g) unflavored Gelatin
1/2 cup (118 ml) Lime Juice
1/2 cup (118ml) Lemon Juice
Food Coloring (optional)
