🟢材料:
梅頭豬肉 350 克
馬蹄 4 至 5 粒
蛋黃 1 個
薑、蔥 適量
澱粉 1 湯匙
老抽 1 茶匙
糖 1 茶匙
鹽 1/8 茶匙
蠔油、胡椒粉、油、蒸魚豉油 適量
🟢步驟:
1️⃣ 豬肉可以買絞碎的,或者自己剁碎也可以。
2️⃣ 馬蹄洗淨去皮,不要拍碎,拍下去它的汁會流失了,把它切開然後切碎。
3️⃣ 醃一下豬肉,放薑末、胡椒粉、1/8茶匙鹽、1茶匙糖、1茶匙老抽、少許蠔油、1隻蛋黃、1湯匙澱粉拌勻後加入馬蹄、少許油拌勻。
4️⃣ 肉餅要盡量攤薄,水滾下鍋,大火蒸10分鐘,撒一點蔥花,淋入熱油及蒸魚豉油即可。

Pork shoulder - 350g
Water chestnuts - 4 to 5 pieces
Egg yolk - 1
Ginger, spring onion - as needed
Cornstarch - 1 tablespoon
Dark soy sauce - 1 teaspoon
Sugar - 1 teaspoon
Salt - 1/8 teaspoon
Oyster sauce, white pepper powder, oil, seafood soy sauce - as needed
🟢Cooking Directions:
1️⃣ You can buy minced pork, or you can chop it yourself.
2️⃣ Wash and peel the water chestnuts. Do not crush them as this will cause them to lose their juice. Cut them open and chop them into small pieces.
3️⃣ Marinate the pork with ginger, white pepper powder, 1/8 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of soy sauce, a little oyster sauce, 1 egg yolk, and 1 tablespoon of cornstarch. Mix well and add the chopped water chestnuts and a little oil.
4️⃣ Flatten the pork mixture and place it in a steaming dish. Steam for 10 minutes over high heat. Sprinkle with chopped spring onions and pour in hot oil and seafood soy sauce before serving.
