If you like a nice bright red color color while being healthy, I have discovered adding 1/4 - 1/2 tsp of red beet powder will provide the effect. It does not affect the flavor of the char Sui.

Try adding achiote to get that red color naturally. It's used in Caribbean and Mexican cuisines to get that signature red hue.

You can use honey or maltose as well. It's a tedious process but we constantly brush our roast pork with honey whilst roasting the traditional way. 蜜汁叉燒 is what we call it AKA honey sauce roast pork

I've tried MANY char siu recipes and this is by far the BEST! Totally outstanding flavor. I did have to double the marinade because my pork butt weighed a little over 3 pounds. Having had several years of experience with air fryers of different models I've learned they each operate at different temperatures so I would strongly advise others following this recipes to choose a lower temperature in case their air fryer doesn't overcook at recommended temperatures. I used two air fryers to make this roast - a Cosori Dual Blaze and a Cuisinart TOA60. I could use your recommended temperature with the Cosori, but not with the Cuisinart because I know that one will severely overcook. I didn't have ground bean sauce and tried substituting Korean soybean paste, using a bit less than the recipe suggested - obviously it was a good substitution because the flavor was perfect. I liked the fact that you didn't suggest too much five spice powder, in fact, I may have forgotten to double that. Sometimes five spice powder can be overpowering strong flavored. I love watching your family's togetherness. Wishing you continued success with your endeavors. Forgot to say that the meat was juicy and tender, not dried out as I often get when I buy char siu at a restaurant.

My family even my mother in law loves it ❤ huge success 😊 My hubby and his mum are very good at cooking but I never cook. Two days later my hubby asked me to do this char siu again. I'm wondering if you could sub in ether Grenadine or just pomegranate juice and remove some of the sugar. It will thin the sauce but will add in a natural red colour as well as a natural sweetness. It might change the flavour very slightly though.

Poor Piggy 🐷 I happen to love Pigs myself as they always uplift my spirit, but I'm a hypocrite for consuming them. Char Siu and Sui Yuk are so tempting. My mom always calls me a pig. She calls me one as a toddler, and I would always run around the household.

Cooking it in the air fryer is an interesting idea but mine is so small I wouldn't be able to make enough. When I make a batch I make a fairly good amount and then freeze it for later use. Daddy Lau is always entertaining though so I watched the whole thing!
