Im born and raised and still reside here in NYC. Hells Kitchen, Manhattan, specifically. Between 02 and 2017 I'd eaten at Peter Lugers countless times. Literally in the hundreds. It was always the restaurant for celebrations or even just randomly for dates, or before/after shows, introducing out of town friendly to said restaurant, etc. Birthdays, graduations, communions, confirmations, anniversaries, mothers/fathers day, and almost any other occasion you can think of. It was always incredible. Amazing old schoool white tablecloth atmosphere, fantastic prideful service, and some of the best prepared and cooked cuts of steak in the entire city. Then, seemingly out of nowhere, the service plummeted substantially and even the steaks weren't hitting like they used to. Long story short, in the last 5 years theyve lost all of their Michelin stars, have had terrible review after terrible review, and their patronage has gone down in numbers theyve never seen. It completely fell apart.

@@thevinceberry You can look up any articles, food blogs, ratings, chefs notes, reviews, etc, regarding PL over the last 5 years. The vast majority will be less than satisfactory. They've lost all of their Michelin stars and prestige due to the astounding drop in service as well as the quality of their steaks. I wouldn't be surprised if they've paid any critics off for good reviews. Thats what they need to do now.

Looks like the only put it on one side and when flipped they rub it on the grates a tad. I assume thats the side that goes down and adds salt to the steak juices. It also looks a little weird consistency to be just salt. Wonder if there is maybe garlic powder and/or msg

EXACTLY! I am red-blooded and all-American but for the life of me I do not understand why it is common here in the US to immediately cut up your entire steak when you receive it?? Why would anybody cut up a ribeye... for the juices to run out and for the meat to get cold?? Crazy

* 0-star which IMO was more a disservice because it seems more like a shock-rating given that the guy did raise legitimate issues/concerns, but it didn't seem so egregeous that it would knock the score to 0 IMO. (I don't see how this video explains anything relevant to that review, honestly.

@@SuicideJones33 IDK if the cooking method would be the issue seeing it's pretty much remained unchanged over the past 138 years (and is one that other places do too) - from what I understood the issues were more to do with quality of the food, consistency of that quality, and service more so.

Consistency could be a supplier problem, but it's typically an issue within the restaurant so it very well may have to do with the cooking method especially if the quality is inconsistent.

@@MisterMick113 It could also be from something slipping up in regards to the people executing the cooking method(s)! Last time I went to the Williamsburg location, the bacon was actually quite cold and a bit stringy (oddly), which I had never had happen before, but was definitely a turn off. (Luckily, when I went to the Great Neck location - which I hadn't been to since the 90s*, it was nice and hot!) *My grandparents on my Dad's side went there quite often, but they ordered their steak more medium-medium-well, which turned me off to steak for a long time. Like, my late brother who LOVED the place would try to convince me to come along when they would go out (and I was old enough to stay home alone), but that fucked up my liking of steak really badly. Took us going to North Shore Steak House for me to learn that I a) like steak, and b) like it really rare, with lots of salt. Took me a few more years to gather the nerves to try Luger again though.

They have to cut the steak before serving because of their method of cooking. They sear the steak and then they cut and put back on grill to cook the inside more. It allows them to serve large steaks quickly and piping hot without excessive reliance on skill to know if its cooked perfectly because you can just see how it's cooked since you've cut it up.

Last time I was at Peter Luger we asked the waiter if they serve coffee. "Yes." "Is it any good?" At which point the waiter, standing straight, shoulders square, smirked and replied "not really." I ordered a hamburger that day. It was easily the best hamburger I ever had.

I remember years ago went to Peter Lugers cause I heard they made good burgers. Nice place and took a look at the menu and the cheapest burger was like $30. I didn't have that kind of dough for a burger so I excused myself and said I forgot something.

It definitely is not perfect and fat is not flavor it is just grease and is totally gross. Give me a good pasture raised grass fed steak with all the exterior and large clumps of intramuscular fats removed prior to cooking no added oils, fats, or butter and cook it to an internal temp of 175 then it would be perfect as long as it comes out in one piece never cut up another mans steak

I just made a t-bone a few days ago. Cast iron crusted on both sides a few min each and tossed it in the oven 400° for a few min. Looked and probably tasted better then these salt mountains.

How to identify yourself as someone who has never cooked before. You need to salt thick cuts of meat VERY LIBERALLY or else the seasoning will not reach the end of the meat. The salt becomes a crust and most on the outside flakes off while the rest marinated into the center of the meat. Learn a single thing about cooking before you start popping off. Chef of 20 years here.

Why on 🌎 would anyone cook a 🥩, ✂️ it up then put it back in the 🔥❓️ First of all, cutting the steak without letting it rest causes it to lose its juices. Second, putting it back in the oven will dry it out and cause it to be well done. Remind me never to eat at this restaurant 😱 SHOCKING‼️

No, that is way too much still. I normally use half of that amount and it's already at the boundary of being too salty. I guess it also depends on personal taste. But that amount of salt really turns me off, especially if they put the same amount on the other side.

Y'all realize the TYPE of salt matters right? Sea salt is wayyyyy saltier than kosher salt. I absolutely bathe my steaks in kosher salt to brine them, but the same amount of sea salt would destroy them (ask me how I know).
