Marion, I live alone in London away from my family in the US, and through the lockdown, I've tried a few of your recipes, with each one being an absolute hit. I thought I hit the pinnacle whenI made your chicken piccata, but holy hell on fire, this dish was the best thing I have ever made. Like seriously, better than a take out / restaurant dish. At the start I almost wrote my meal off because the lemongrass I bought was very dry and I accidentally bought bone-in-skin-on chicken thighs (took ages to cut the meat away from the bone!) but I followed your steps to a tee and exactly as you said, by magic, I had this delicious, caramel-y chicken dish. I'm literally going to make my family taste this blindfolded next time I'm home and ask them to guess which restaurant it came from, only to reveal I made it. It is a 1,000 out of 10. Thank you!!

The skin on actually makes it more delicious!! Pull out the onions when they sweat down then the chicken skin side down , and then return everything to the pan and continue with the recipe - delicious!

You better learn Vietnamese dishes from Vietnamese people. Even though it looks right foreigners tend to make these Asian dishes with their own "touch". No offense to foreigners. I do really appreciate foreigners cooking Asian dishes. It's just really save to learn it from the "origin"

Made this twice in two weeks ❤️ it's a hit guys!! I found that the first time I over stirred and it didn't come out as caramelized and sticky. Leaving it for a bit then stirring occasionally made it BEAUTIFUL 😍 Vietnamese food is just so good for the soul

Lemon grass finely chop x3 use half for marinade Marinade Lemon Grass Fish Sauce 4 Tbsp White sugar 1 Tbsp ½ tsp cornflour (cornstarch) Mix Add chicken thighs deboned Sliced Onion Garlic Chuncky chopped x 4 cloves Red Chillie (not super hot) finley chopped Fry Once soft add chicken Fry Once brown add Coconut water and simmer for 10 mins Garnish Coriander

This dish turned out amazing...only thing I did different was to cook the chicken first till I got some browning, then added the onions etc. Waited on tenterhooks for the coconut water to boil down to stickiness. I’ve had this dish many times and it was a delight to see how it’s made. I lived in Thailand for 3 years as I married a Thai woman and adopted her 3 year old daughter. One of the best way to cook Asian food is to get a 14" steel wok and a high BTU burner and place it next to the bbq grill in the back yard. You can cook the day's meal very fast because of the high heat content of the wok. One huge advantage of cooking outside is the smoke from cooking doesn't permeate throughout your house. You can stir fry or cook the most umami meal without worrying about how your kitchen smells afteward.

Fantastic synergy of ingredients! I substituted maple syrup for sugar and coconut based soy sauce substitute for fish sauce. It came out beautiful. Nuoc cham sauce is out of this world. I used drumsticks on barbecue and it retained lemongrass juiciness throughout. I marinated for 12 hours and I think it is essential for the infusion of lemongrass. A keeper! A subscriber!

I made it today and honestly, that was one of the best things i’ve ever eaten (and i cook a lot). My local grocery store was out of lemongrass so i bought a lime instead, zested it and also added juice of half. I really recommend trying this recipe out! I’ll definitely be making it again. Greetings from Toronto, Canada! You are my new fave internet cook. Love how you explain the different elements/steps of your recipes. I just bought the fixings for the eggs/ch. thigh/rice noodle crispy wok fry and cant wait to try my hand at it. The tip about looking at the colour of the fish sauce before buying, is much appreciated. In Canada, we have a cook who won a televised cooking competition, and who now has her own show called "Mary's Kitchen Crush". I mention this only because she has her own cool look going on with eyeglasses - only the frame is light blue. (She is a redhead, so they work well. haha). Anyhow. I find it too strong of a flavor and smell. It just depends on your taste buds. Definitely lemony flavor, my Vietnamese restaurant near me puts it in everything even the fried rice but in Bún bò Huê it doesn’t come through as much.

I make this quite often, as well as Thai basil chicken. As a diabetic, though, I just leave out the sugar, and it really does turn out fine. The fish sauce does smell unappetizing when added, but it cooks off nicely, leaving behind great flavor. When the fish sauce is added, I simply avoid "smelling" the dish until it has cooked off. Same with Chinese cooking wine....strong smell going in, but I know it's cooked off properly and brought flavors together when I can no longer smell it.

I just made this but with a few changes; one tbsp less fish sauce, blended the marinade, added a tbsp mirin (just cuz I love mirin), added a tsp of sambal oelek, skipped the chili’s because I don’t have them, and then substituted coconut water with a cup of hot water mixed with a tbsp of brown sugar... it was still goooooood lmfao I just realized I basically made a different recipe.

There's a local Vietnamese restaurant near me that makes a Lemongrass Chicken very similar to this. I'm pretty sure they're not using coconut water, and also the sauce ends up looking very runny and more oily. It's also very dark - like soy sauce in terms of color, but otherwise I think it would taste very similar to this recipe. If I don't use coconut water, what would you recommend to leave it runny but not over seasoned?

If I put ginger and coriander in my squash soup, I have asian ginger, North African coriander and Native American squash who am I harming? Food is about sharing.
