It's not Carla's fault though. If you watch the Gordon Ramsay video of Back-to-Back you will get the tone that they were going for here. I think BA realised the the audience does not only want professional chef content and the it would be better to make it a learning experience for the guest and the viewer.

while i agree that Flavour is important, the saying that most chef's are fat is actually a myth. Of all people Chef's especially know how to eat healthy and believe me when i say that working in a gourmet Kitchen requires some serious physical fitness. It can get hectic in there and you either move or you go down.

But that's funny bro. "well done steak with ketchup" ... That's great on so many levels. I thought instantly, either an immature adult who still gets his food sliced by his now aged and wheelchair barren mommy because he's 42 and hasn't ever left her basement. or #2, just a sad way to be... A bland, sour-mouthed idiot with a low I.Q. and no travel or life experience that's the least bit exciting where KZbin is his place to attack and conquer all that insecurity he's saved up, but none of it goes away and he washes that tasteless cardboard steak down with unflavored aloe water that's been kept unopen in the fridge collecting fruit flies and a brown glaze hovering at the top.

I really feel for Marlon, made hollandaise once for fun and had to try it three times wasting a whole block and a half of butter to get it right. Imagine doing that under time restraint and with verbal cues and not watching 15 tutorials on how to make hollandaise!

I agree with Dylan that poached eggs are super easy especially with a professional guiding you through it. But his hollondaise was very good for a beginner even with a chef guiding him. My first time making it, I had a chef tell me exactly what to do, and mine ended up all curdy and disgusting

My guess for why she's so rude is that this is the first "Back to Back" she did and she was trying to make it more like the ones that came before (like the Gordon Ramsay one). I'm thinking she figured her own style out later.

PSA: this was her first episode, back when they were switching out chefs and it was usually a very strict and fast format. this was before she really found her comfort zone and figured out that being open and patient and TEACHING was what really made the show work

Gotcha! I was wondering if it was her first time doing this show and maybe she was just really strict with the time..bc in the other episodes she'd cut up with them and didn't seem to be as "stressed" about the time limit so she'd actually TEACH them.

Yeah I really think (looking back now) it was totally her feeling the rush from producers to actually stick to that hardcore time. And I do think his comment probably threw her off and maybe she felt like he was being aggressive, but we all see it was completely him being funny and making jokes to ease the tension. I think it was just a tough video for it to be her first one to try and make eggs benedict in 15 minutes with someone that isn't a cook. Because in the very beginning (before the joke) she was her usual fun self, but I think it changed after that. Tough one to watch tho! maybe BA should consider taking it down bc clearly everyone in the comments are shook after watching it!

Does anyone else think Carla was being a bit serious. Like I know people are gonna be like, “oH, bUt GoRdOn RaMsEy Is SeRiOuS”. Yes, yes he is, but Carla (if you have watched her other videos) is usually very humorous with the other actors. I think the race comment he made in the beginning really pushed her buttons lol

I think she just knew from the comments he made that he wasn't keeping up and not sure what she meant half of the time. But not having the time nor the ability to just look over and help him she tried to pull him through with a bit of a harsher tone so he'd focus and get a good result. Was hard to watch though! I feel like they need to match up the dishes with the guests better. He'd done great with a different dish I think and then she'd have been more relaxed too. Oh well.

Yeah, it was the original format of the show. Check out the Ramsey ep. This was the first one she did, so she went along w/ what was done before. Being a strict Chef, going through it super fast and having no patience for the guest who are meant to "keep up". When they decided to keep her as the 'host', you see her take her naturally kinder approach in the rest of the eps. Would love to see him back!

@@psolo3 but the thing is she's TEACHING him, as a teacher, it's effective to be patient. And since she's been doing these for a while, she should understand by now that she needs to be patient with people who are less experienced than her. And even when the food was done cooking, she still had a bad attitude. As a person with anxiety, I personally would HATE to work with those attributes, it's nerve wracking

I was kinda agreeing with all the other comments.. didnt have same energy as Carla's other back to back episodes.. BUT it looks like this was Carla's first episode and it was following the 3 professional chef episodes with Ramsey and Bobby Flay.. I just think she was following the original premise of series which is being a professional chef..they also only had 15 minutes not 20 like in later vids..

So my theory why Carla is being purposely curt and rushed is because that was the original "idea" for back-to-back chef. Someone tries to "keep up" with a pro chef, while the pro chef goes super fast and treats them (kind of) like in a professional kitchen. And then I think BA figured out it's much more entertaining when it's just Carla being nice and encouraging and just trying to talk people through recipes. Checking a couple other vids, this one came out several months earlier... so it might be the first? Also, skip to like 8:10 and she's chilled out. I really think her "attitude" was just put-on for the idea of the show.

I agree, it was the previous format that kept a quick pace and she was following that. This IS Carla's first and the first with a celebrity too so they definitely changed the format for the next one leaving Marlon as the guinea pig of sorts. I hope you don't mind but I've been posting that this is Carla's first and the notion that the older format was faster paced, with a mention of your username of course, on other comment threads. It's unfortunate how this comes across but it's not how people first perceive it and your comment helped me realized that so i wanted to pay it forward.

Apparently, this was her first episode with a celebrity and they kept the "speed" format that Ramsay and Flay had with their Keep Up episodes. It seems they changed the format a bit and slowed down the pacing for the amateur cooks. Also, If Ramsay was as short with him the way she was, people would be celebrating him because that's what he's known for.

Nah, it was the original format of the show. Check out the Ramsey ep. This was the first one she did, so she went along w/ what was done before. Being a strict Chef, going through it super fast and having no patience for the guest who are meant to "keep up". When they decided to keep her as the 'host', you see her take her naturally kinder approach in the rest of the eps.

This was the first back to back she did. There were other Chefs that came before her. The original idea, like w/ the Ramsey one, was to have a Chef go really fast and treat them like they were were professional. Going through the recipe really fast and being really strict and seeing is the guest could "keep up". The format changed when they decided to keep her and she was just her naturally supportive self, basically teaching the guests.

@@gzbty929 She doesn't rush any of the other guests. Yes, there's pressure in the kitchen, but they aren't going to serve it to any client, it's entertainment only. She doesn't pressure anyone in this series, it doesn't make sense for her to put pressure on Marlon. Even if the recipe needs to be done quickly, she as a chef should've chosen something that wouldn't require her to rush her guest.

Doing this at the pace required of a chef at a very busy breakfast place was the whole point. The point was definitely not to do this at the leisurely pace of a Sunday morning home cook. Wayans didn't do to terribly on anything except the sauce.

I had high hopes for this episode because I really like her and Marlon can be funny. She was rude as hell which was surprising because other participants screwed up way worse than this and she seemed to have a ball smiling the entire time.

Ramsey, Flay and Boulud's episodes have a quicker format and it seems like BA was trying to keep the that format for this one (Carla's first). They changed the approach next episode and it stuck. It's unfortunate how it comes across to newer people who have no reason to watch the episodes in order. Through no fault of their own or BA, mind you. I was taken aback too till a comment further down by Lauren Clisby let me know of this. She didn't comment on other threads though so i'm doing it, i think it's important.

Well....that wasn't an easy dish but to get all the components done on time she did have to get him to focus lol. I appreciate her as a chef and instructor. She laxed when the time was right. And once marlon got into it he realized it too. She wasn't mean lol. Kinda made me think of ratatoullie when he's teaching his human friend how to cook. He was strict but it was out of love. 😊

I think this is the first episode of the back to back cooking with a celebrity she did... she has gotten better, realizing you don’t have to rush as much and she can let the celebrity joke around. Plus her instructions have improved so much!

Nami Ahn I think you're projecting a wee bit. She wasn't speaking to him like an inferior. She was speaking to him like he was a non-cook. She can't very well use cooking terminology to someone who's not a cook. And she has the added hurdle of instructing him without seeing what he's doing... all under the pressure of the clock. As a chef, she was doing a good job but the lack of trusting his word and forcing him to clang. Or, the best example, his whisking. She kept saying to stop but then that he couldn't stop and then he wasn't making enough noise. It was a bit overkill. I know how cutthroat a fast paced kitchen is and I know eggs are very time sensitive, but she could of loosened her grip a smidge.

As a black person, it puzzles me when some people see black people acknowledging their own culture as divisive. And yet, when other people come on here, like for example, Alessia Cara, it was nbd to prepare a dish that spoke to their shared Italian heritage. She was really not patient with him like she was with other hosts. They should invite him back for a do-over. This made me cringe. BUT, it is also possible that there's stuff we didn't see off-camera that explains the dynamic. She just might not like his humor. Which she's entitled to. She might have been nervous too. It also might have been difficult to keep a personality like his on task.

Home boy didn’t do too bad honestly. All he really messed up was the hollandaise, which is really hard to do for your first-time, when you have no idea about emulsions and “splitting”.

Here's the thing, when they first started making these videos, it was with other chefs (like Gordon Ramsay). And the whole point of the videos were that average people couldn't keep up with professional chef, and that it's funny to see what goes wrong. Carla is just continuing this trend. But for some reason, they decided to abandon this concept and just have the nice leisurely cooking back to back thing now.
