I'm fitting the new rafters on the cabin, one of my favourite parts of the building. It's a colder and rainy week and I'm struggling a bit to make a good loaf of bread.

Martijn, I hope you know you are also building our imaginations and confidence just watching you (very few of us have the guts to strike out on a bike for two years ;). The scene of you sitting on your chestnut rafters, with the mountain in the background...stunning. Don't be too flattered, but I hope you get an award for your original work! Most people can do these things, they just need a little encouragement, it does not help that western governments and education systems do the opposite and encourage dependency

@@randomromania I agree. Our education systems focus on academia - which not everybody is cut out for. Once in the workplace everything is geared towards commercialism and competition, with everybody working towards similar, unachievable in most situations, goals dictated by government and societal pressures. Considering ones working lifetime and realistic earning capability, what Martijn is creating is worth far more than being a wage slave. The energy, time and detail he is putting in to his project is rarely allowed in our commercial world, yet is so much more satisfying and holistic than chasing unachievable goals. One just have to be brave and confident in their talent to break away from societal pressures....... Martijn appears to have done just that........

Watched you since 1st episode, watching you rebuild your cabin is like watching the building of your future, it’s good to observe the building, carpentry skills you possess , the way you approach everything in such a meticulous way, even the kneading of the sour dough bread, all done with a passion, yes it’s been an absolute Privilege to observe your ways, the way you interact with other people, the environment around you the animal, birds and trees you share your life with and that rocky outcrop overlooking the valley that draws you back time and again , a place of solitude, a place to relax and collect your thoughts, thank you for doing these videos Martin , they really lift souls, spread a little love about but most importantly they offer the viewer an alternative way to the 9-5 grind, at 69 I don’t work anymore so I’m contented with my way of life and pretty set in my ways, but younger people should take a leaf out of your book and have a go at being different to everyone else, it does work, you are living proof, Mike UK

That match cut from night to day at 42:32 was excellent. The shot of your shadow climbing onto the beams to work was quite nice too. Creative cinematography in this episode, Martijn!

When you have bread that is over proofed make crisp bread out of it. You can fry it in a pan with olive oil or on a griddle with less oil. Sprinkle it with garlic oil and a bit of sea salt. Slather it with tomato paste like a pizza. In fact it makes a really good thin crust pizza.

@@johnthebob1 Well he is kinda new at bread baking. There is a point where dough can't be resurrected for bread but yes, there are other options. Maybe he didn't have a use for those options.

I want to thank you so much for this video. It feels almost like a holy experience. Not in a religious sense but the rich greenness of the forested mountains, the clouds as they move, the rain as it falls nurturing the life in the woods, the interconnectedness of all life in the forest, the rightness of it all and the beauty of the music you choose that just accentuates this feeling. It is a previledge to watch you work doing what you love with such thoughtfulness, planning, preparation and precision. Your videos are superlative; masterful and deeply moving Martijn. Greetings Martin I hope you plan to use flue liner inside your stone chimney otherwise the creosote will build up inside the gaps in the stones and WILL cause a chimney fire the liner is made out of Terra Cotta and is very inexpensive please don't skip this step and as always thank you for the great content

His stove will be close to a Rocket Mass Stove, It has a very high heat burning in the combustion chamber. The higher the conbustion the more complete the burning will be, and less Creosote will occur. However every detail counts. So the liner will probably still be a great idea

Yet another great episode. On the chimney, even though you plan on a masonry construction, you may still want to consider a stainless steel liner for long term safety.

@@shanesmith3091 Brick chimneys are efficient and safe. On my roof (which is the same as that) there are some that are 250 years old. My house has never burned (or rather it was burned only once by the French army, in 1690, but it was not self-combustion).

@@giorgiodifrancesco4590 I'm sure they can be very safe, but what I meant Giorgio, is that there are huge differences between an open fireplace at around 10% efficiency to ones like mine, which is a British Rayburn slow-combustion stove, which is 85% efficient at turning the fuel into usable heat for domestic hot water, hydronic heating, cooktop and oven. I just think it's smart to make it as efficient as possible, even if you want to retain a rustic original stone design.

@@shanesmith3091 I agree. It depends from what you desire and the size of the rooms to be heated. With bricks you can make a closed stove and not just an open fireplace. It certainly costs less than a British Rayburn. Less efficient, but good.

It's great to have the cows and goats graze on your property. They keep it clear and you can use the manure for fertilizer for your garden. So nice of them to give you the milk and cheese. You are doing such a great job. Thank you for sharing it with us.

Yes that is how it is done with farmers here in Canada. When our neighbours allow us to cut hay from their property we give them lamb chops in return. Nice of the farmer’s wife to bring you some treats.

I love watching your videos. It calms me down. It's a bit sad at the same time. My youngest son passed away in June. He loved the mountains - we used to vacation there whenever we could (West Virginia). He was saving money for many years to build a cabin in the mountains; planning for next year. Next year will not come for him. God bless and keep you. Thank you for your work.

Martijn Doolaard, you are educating, inspiring and "Changing the World" by showing us how it is done, getting back to basics, and showing us that we are never alone (you have community on the Mountain, and around the World; simply stunningly successful, what!?) ... 0:08 Well concrete more likely is hardened enough that form can be take apart. Concrete hardens on ideal circumstance 28 days. Drying is different process and usually takes several months even too fast drying can cause cracking and weakens concrete and that's why quite often it is good to cover with tarp, plastic or also can done with chemicals. Easiest way to get all rafters in same plane is to made both end first then pull a string between very tight then you can take measures from string or use specific block over rafter and when it barely touches string it's in right place.

@@bear1245 Yep, i saw after finished watching. But maybe later or when your building is actually really big it work better. Really long runs you need to support string also middle because it will sag no matter how tight you try to get it.

Brilliant work Martin, look forward to watching every week. Have you considered building the stone chymny on then outside of the house? Sealing around a stone chymny inside the house is going to be a nightmare. You will need a metal chymny inside the stone anyway and passing the tube at an angle through the wall and coming up then outside of the home should be the same amount of work masonry wise. It also allows you to do the inner stove later and without the chymny directly above the stove inside your indoor masonry stove is more open design wise to being a stove or having more a larger surface area to radiate heat inside the home. I am pretty certain you will have water leaking along the inside of the chymny in the house quite quickly. The temperature changes and expanding and contracting of the chymny will not take long to break even the best of work sealing around the chymny

a chimney inside the home works better than outside . the objective of masonry heater is to radiate the thermal mass . a central location is ideal.

@@samsonvallely7759 on a modern roof with standard shingles, metal or a traditional roof with small form slate and a high pitch sure, but on a low pitch roof with his water barrier under stones that weigh more than a man if you have to move them. I'd not take the risk of the leaks of the water through the roof. I am sure modern code in Europe requires the chymney have an inner pipe to prevent fumes leaking in the home when mortar cracks come so unless he leaves the stainless pipe exposed not going to get much radiant heat from the chymney anyway.

A reference I found: Can you fix over proofed bread? The good news: We found an easy way to rescue overproofed dough. Simply punch it down gently, reshape it, and let it proof again for the recommended amount of time. In the test kitchen, these steps resulted in bread that tasters found acceptable in both texture and flavor. Keep up the great work.

I’ve been watching from the beginning. Has it really only been 10 months? Given the downtime in winter, you have made a lot of progress in a short time while doing most of the work yourself. What a great accomplishment!

Hi Martjin, I suggest you raise just 4 chicken and a rooster and enjoy fresh eggs. Build a small coop for them, in winter just cover the cage with see threw nylon. Chicken will survive cold winters. Lock them in for 2 days and they will never leave, they will roam around , feed and come back at sunset. You don’t have to worry about feeding them if your not there. Keep drinking water for them at all times. You can raise there coop so foxes or predators can’t reach them. Good luck

I have an enormous affection for those beams and rafters, considering how they were trees, and now, horizontally, will continue to shelter and protect those who sleep beneath them. I realized this when I was very nervous for your first cut at ca. @12:10. 🤩

Well done Martijn, I love watching your journeys, in fact I've watched 34 videos in 10 days, from #1 to #30 and the 4 parts of your 2nd year on the bicycle. and now I'm waiting every week to watch the new chapter. Epic spot on the mountains, great project, huge renovation efforts, cool outfits too and relaxing video editing. Keep it up

I've watched Martin and his current Italian renovations from the very beginning, and it's always a pleasure to see how exacting and hard-working he is in everything he does. (I especially like to watch him make his delicious-looking bread loaves! 🍞 😀) It's also been satisfying to see how many good-hearted people have come around to help him with various jobs over the months. Can't wait to see all his numerous projects come to completion. 👍

I have watched every single one of your videos, not only are they inspirational but are therapeutic too. You are an amazing craftsman who reminds me of my late Dad. Dad was a design engineer who crafted everything myself and my sisters grew up with, so I became accustomed to precision of detail and perfectionism. Watching you work not only brings back memories but also makes me realise the rarity of talent like yours - even down to making your bread, your attention to detail is astonishing. I really wish my Dad were alive so I could share your videos with him, he would love watching them and truly appreciate your craftsmanship - he would also appreciate the beauty of your location, he spent part of his youth exploring the Austrian Alps on a vintage motorbike. What you are creating is an amazing piece of paradise that can't be taken away by anything, everything you are doing is created by your own hard work and talent. You really are an inspiration and a joy to watch and I look forward to each and every one of your videos and the progress you are making....

I'm watching the third day and I'm in episode 33 - enchanted. A lot of work, passion and film editing is absolute beauty. Something you did 42:30 to 42:38 - no words. I'm just afraid that I'll get to the current episodes and ... I'll be waiting impatiently for the next ones

Add some milk / water and some baking powder to over proofed dough, then you can still bake pancakes. Also you can cold proof it for a little bit longer overnight. You can extend bulk fermentation up to 24h. Bread might get a bit more sour, but sometimes that's likable :)

I like to make dropcakes if my dough goes too far. Still very filling and great fried off in bacon fat.

I think you can also punch it down and start to proof again but the proofing time will be quicker.

I have to say this is my favourite video so far and I have watched every one. Seeing you thinking, planning, measuring and sawing the wood brings back memories of watching my uncle. I remember him telling me,measure twice and cut once. Very good advice. Thanks for sharing Martijn. Amazing cloud formations too. 👍

Never seen such perfectly captured videos. Every camera angle is thought through, the small details I notice in every one of your videos is insane! How you place the camera so that the shadow captures you working on the roof. No words. I bought my Portuguese lodge house in June 2003 and started work on its complete restoration in July. The same month that a forest fire ravaged the Parque Natural in which it is located. We moved into our fully restored home on Christmas Eve. That roof structure is exactly how my Portuguese master stone mason and I built ours, beam by beam Twenty years later, it has never let in a drop of rain, withstood hurricane force winds, 40 degree Summers and torrential rainstorms. It is still as straight as the day it was laid. It makes me smile whenever I look up at those beautiful beams. A hundred square metre house, completed by two men in six months. Let no-one ever criticise a Portuguese builder. I mixed every trowel of cement laid and barrow load of concrete. The greatest labour of my life. I'll never, ever leave my beautiful Alentejan home.

There are numerous wood and stone buildings in the mountains here but bring an urban person i didn't like that. Watching your videos has given me new found respect and ignited a love for them. I hope the younger generation, who will own these homes at some point in their lives, will respect the effort and beauty that went into building them and not demolish them for concrete buildings.

Too late now... but for the future and others. As an general rule, you don't want concrete and wood in touch with each others. The concrete has high moist content (always) and will keep the woot damp and cause early rot. Some plastic or rubber between is important.

Not too late now. If I recall correctly Martijn did say that he would be taking it all down to stain/weatherproof the rafters and beams and to do some masonry before putting it all back on. Trouble is, how do you actually get your message to him? With so many comments I doubt he has the time to read them all.
