I just came upon your channel & have subscribed & followed. I love your content & your peaceful approach. If I want to use this in cleaning, it will have the citrus cent & a much more diluted vinegar odor? I really like to clean with vinegar, but my family hates the odor. Also, for flavoring, it taste citrus & not so strongly vinegar? Thank you & have a great weekend.

Hello I've come to the 30days or so mark and my pH strip is 4 and I was wounding how can I get it to 2.5, I did make a big batch in an old 5litre tub, shall I keep allowing it to ferment and replace the citrus peels with new one or keep adding more sugar?

This is new to me. I made this w distilled white vinegar & orange peels..but the solution turned out sticky. I let it sit for 30 days & added a little water & dawn dish soap to the decanter. Not sure what happened here...too sticky to use for cleaning.

It blows my mind how often when I search for a very specific and unusual recipe I always get suggested your videos. It's like there is no video you haven't made about the different, more traditional ways, of transforming produces to reduce food waste. Mary, I make vinegar from many things. The one I like the best is juniper. You use the juniper needles instead of fruit. Leave it in the bottle with some sugar and in 30 day you have a wonderful "outdoorsey" smelling vinegar

Hi Kate, Oh my goodness!! I am so glad you reminded me about that. I have heard a lot about making vinegar from Junipers and our property is covered with them!! I need to put some of those juniper needles to good use!! And I use the berries too in cooking - like for when making Sauerbraten. So glad you're here!! You have wonderful ideas to share!! Love, Mary

@@MarysNest Hi Mary, I have one juniper and I brought it to this property from my former home in the city. I knew one could cook with Juniper berries, but have never investigated them. So far I really love the scent of the juniper vinegar. It leaves a lovely aroma after the vinegar scent dissipates. I am totally enjoying this "collaboration" we seem to be generating. Cheers!

Thank you Mary I just made your second kind. I had 4 oranges, 1 lemon and 1 lime that was all getting old. I enjoyed making fermented foods so this was something I wanted to try. I hope to share it with my children.

A lovely recipe for the peels Mary. All the wonderful oils they contain and so many uses. And to think all these years I have put them in the bin. Oh Mary you have solved my problem after months trying to find out about the jars and you have solved it for me, yes Fido jars!!! Perhaps more air tight than other jars. Thanks for the informative video, Mary. I also watched your video for apple vinegar and I happen to have some apples that won’t get wasted this time. For the orange vinegar, I happen to have a couple of trees that produce beautiful oranges, but they’re not edible. My trees froze one cold winter and sprouted up below the graft. Now they produce an orange filled with seeds and very little pulp. I can’t wait to see if they’ll make a good orange vinegar. Thanks for the tip about about adding a second quarter cup of sugar for a second ferment.

I use citrus vinegars! To spray on the hard water deposits, on facets and glass shower door. Also in my chicken coop and goat pen! Very useful! Also!!! To deodorize containers.

Hi Mary, great video tutorial on making citrus vinegar. We like to make hot pepper vinegar with homegrown peppers. How about half fresh hot peppers and half citrus with the white vinegar method. Would produce an interesting flavor profile!

I do citrus vinegar for christmas, mix chopped fruit from lemon, lime, orange, mandariners, grapefrukt etc and add white vinegar, it takes flavour faster, and is so fantastic to use on christmas salads.

When I started lacto fermenting I would always save the peels and put them in a jar with salt and water and let them ferment that way. Now I have a new way to use them by making myself some vinegar.

Just a hint, a really easy way to secure the coffee filter is to just use a canning ring....

Hello Mary, I already saw this before and forgot. Now I feel bad because our lemon tree was producing a lot and we used the fruits and I just throw the peels.😢 😢 I'll make sure to remember next time. I'll be straining my apple cider vinegar today after 15 days coz it's already very vinegary since it's very hot here in Barcelona. Thank you❤❤❤

Hi Mary!! Loving the videos. Question: Can I use a pot (such as ceramic) to ferment? Or does the container have to be glass?

For anyone still curious… glazed ceramic is fine (as the glaze is actually glass) other ceramics depend on its porosity and if it has been used before, for what, and if its porous do you want to use it for something else in the future. ( for example: porcelain must absorb less than 0.5% water in order to be classified as such). Asians traditionally used ceramic pots (and writing this I just realized all these asian jars Id purchased at pic n save in the early 90’s were vinegar pots…..oh how I wish I had them now darnit). So long answer short…most of the time. If you send me a message I can try to help with something specific

So very happy to find your recipe which is just what I wanted as I kept wondering why vinegar could not be made with citrus fruits especially since it’s in season in Delhi my part of the world. We call it KINOO. Thank you so much for sharing I was wondering if I could add cinnamon ginger garlic for health reasons prior or post to the mix of ingredients? Orange and cinnamon would be really a great flavour.

Hi Mary! I love your fruit vinegar series so much! I just made your second recipe using whole tangerines that were about to go bad. I just realized that I'm going on a trip from the 14th-19th. We live in a cold place, so I'm guessing the fermentation won't be as fast as in Texas, but I won't be around to stir the vinegar. Do you think it's still worth keeping the jars?

Hello Mary. I came over from This and That with Denise Jordan. Your channel is so interesting! As a little girl I always wanted to live in Walnut Grove, Minnesota and your channel is the closest I've seen to that dream... LOL. I wondered if alcohol would result if you somehow stop this fermentation process call but I see you already answered that question in the comments.

Hi Nell, Thanks so much for visiting!! Yes, you are 100% correct. In about a week or two, the vinegar "in the making" will smell like alcohol - very beer like! How about that!! I'll be if you reftigerated it at that point so slow down the fermentation, you would have a mildly flavored homemade drink - wine like maybe? - that would be slightly alcoholic. I am thrilled to here that you like old-fashioned cooking. I like to show folks what traditional cooking really is - bone broth, ferments, sourdough, etc. Packaged yeast wasn't even sold back in their day LOL!! I have made the ACV but never orange, since cost on citrus fruit is low, now is a good time to try it. Could you maybe do a video on showing the many uses you have for it, blessings

Hi Mary, I have a large amount of lemon pulp I saved from juicing seasonal lemons. Would that pulp work to make vinegar with the same as the skins or whole fruits? I made your pine needle vinegar in 1/2 gallon size last month and it turned out great. Now I'm about to make it again, this time in a 5 gallon bucket with lemon peels, also saved from juicing lemons. Hi Mary. I started my lemon and also strawberry vinegars after watching your video's. I started it on August 3, and I check the ph today. It looks like the ph (I am having difficulty reading because the color is not one that is on the side of the container. Do I leave them longer, do I need to ad sugar, or what? I am sure one can the same way. May end up ideal without sugar but white vinegar added instead. Perhaps will make a great cleaner. So why add sugar? I am sure it will work both ways.

Hi sweet Mary, Wow this is new to me! I live in Spain, all our oranges are finished now ( I made lots of marmalade for my hobby ) but now we have the biggest lemon harvest I have ever seen in Spain. After seeing this I should be able to make vinegar with them! I have been looking for recipes with lemons, so now I have lots of lemon curd and lemon and ginger marmalade ( your recipe ) Yummy stuff! Since store bought vinegar is being used to scent in the third one, could that be used in canning? You know the bit of vinegar put in the canning water to keep the glass jars clear? Well my son hates the smell (I don't even smell it), I wonder if I scent the vinegar if it would change anything for him. Hmm, I know just the orange ...

Hi Christiane, Unfortunately those don't work because making vinegar is an "aerobic" fermentation - not an "anaerobic" fermentation so you want to allow oxygen to be part of the fermentation process. Love, Mary

My grapefruit vinegar turned a deep red, it's clear, but doesn't smell like vinegar. There is a lot of kahm yeast which I just kept stirring in. Should I start over. I have two others that I started a week later. One is starting to turn red and both have a lot of kahm yeast on top.

Hello Mary. Thank you for your videos. I would like to check something with you, and it is the use of citrus fruits for the purpose of making vinegar. Unless they are organic, do you think they should be used? I have researched this a little bit, and the citrus fruits such as oranges, tangerines and lemons are laden with pesticides, some of which can be very dangerous when taken in big quantities. I am a bot wary about making vinegar out of peels or oranges. I guess they could be used for cleaning and such, but I just keep imagining pesticides being smudged all over the household surfaces... :D

Hi Strahinja, I understand your concerns completely. If you can find and afford organic - yes go with that. If not, then I recommend giving the peels a good scrub with a vinegar and baking soda paste and then a good rinse. This won't get rid of all the pesticides but it will reduce them. But yes, I agree with you. When something is too concentrated, it can be a concern so best to avoid. BTW - so happy to see you in the FB group! Love, Mary

I followed tour recipe with diced fruit with peels. Did two. Lemons and Tangeras (Orange/Tangerine hybrid). 4litre jars. (almost a gallon). Put in 1/4 cup sugar. No bubbling / fermentation. Next day added another 1/4 cup sugar. Still no buubles / fermentation. What is wrong?

Hi Marry, thanks for the great video. I am trying out the vinger with whole fruit version. ‏it's been a little over one month now and it smells very nice but has a little bitter taste do you think that's okay? .

can you cut up a whole lemon and put it all in the jar? or does it need to be just peels?

I know this is an old comment but yes you can. But cut them into 4ths and eighths. I use lemons that start to feel dry and hard so be careful cutting them. They’re harder to cut like that

I generally use filtered water. If you use tap water, leave it over night or boil it and allow it to return to room temp to allow some of the chlorine to dissipate.
