Mary, i make vinegars, too, but when i 1st started, i just poured white vinegar over citrus peels vs. actually fermenting and creating my own from scratch. I still keep those original infusions going and take out the older peels, add new but i started adding water (by accident!) Instead of white vinegar. Low and behold mothers have grown in all of the jars even the ones with just lemons and I never added sugar to them. Its pretty cool! Although the citrus infused vinegar smells nice, i like my fermented vinegars the best. I even made vinegar from my lavender plant cuttings!

Mary I absolutely love you! I get so much information from your channel. My mom passed when I was 21 and she didn’t have these kind of skills…or at least didn’t teach me 😅 so I’m really thankful to have you showing us all how to do things so I can pass this knowledge and lifestyle along to my kids

Thanks! I am on my first quart of fruit scrap vinegar! I did get inspired from other channels that I love, but I a super appreciate your methodical and detailed teaching on this. It answered a lot of my questions. I already have pH strips purchased for making kombucha.

Love this and will give it a try. What do you do (if anything) with the remainder of the fruit. A useful tip for using tap water - boil it first . It helps take out the chlorine

Only problem is, I read that boiling solidifies Florida. ☹️. However I believe it will evaluate if you just leave it sit out for a day or so.

I love your teaching on ACV and have had the opportunity to make several batches since the first time I watched your video. Thank you! I do have a couple of questions in regards to those batches. One turned out very well and the other, well, let’s just say it’s an excellent weed killer!😊 Because I eat apples every day, I save the scraps and somewhat bad apples and put them in a bag in the freezer. After I have enough for a jar of ACV, I start a batch. I’m not sure, but I think the fresh apple scraps made the better vinegar. Have you ever had that experience? My second question is in regards to the Mother. I now have several (You can’t have too many mothers!) and I keep them in a separate container since they were plugging up the original container’s spigot. As I use balsamic vinegar often I would like to know how to, if possible, make that from some of the extra mothers. A video on how to make this, and any of the other vinegar types, would be excellent as well. BTW, I so love the video on how you addressed your son’s learning styles! As a teacher and an ex-homeschooler(sons are all grown and flown) I’m glad you showed others the importance of growing character first knowing the Jesus can use us in whatever way we were created!!! ❤

My son in law LOVES the vinegar I made with your instructions! Its helping him recover from the after effects of colon cancer. He wants to know if I can make him a pineapple and coconut one. Can you use coconut? Will the fats effect it? Thank you so much for your channel! So in love with it!

Hi Tricia, I am so happy to hear that this his helpful. Hmmm...Coconut....I am not sure about that because you are right - the fat in coconut might create a problem. However, that said, I know that there is a coconut vinegar so I wonder how they make it. I will have to do some research on this. Love, Mary

I have never made homemade cleaners but the orange peel with the vinegar has inspired me. I need to purchase some oranges to try it, I have dehydrated the orange peel and blended it to add to my teas, learned that from Heidi. I enjoy these type videos sweet friend and you teach so well, blessings

Oh, I am so with you...the orange peels in tea are wonderful...and if you want to try something really delicious...add a big handful to your bone broth when it is simmering...yum!! I am fairly new to making vinegar. I wanted to make apple cider vinegar to add to my chicken's water (1T per gallon) for the health benefits. I don't grow apples but I do pears. I thought that what ever you can do with apples you can do with pears so I used them and it came out great. I presume it would be beneficial as well. I also make the cleaner, but just add orange peels to white distilled vinegar.

You can buy half gallon mason jars with wide mouths from Walmart. They come in a 6 pack with lids and bands. Although mason jars are hard to come by this past year. But she mentioned in another video that she reuses containers from store bought food like pickle jars. I use plastic gallon pitchers. Like what you'd use for ice tea or koolaid. One with a nice strudy handle.

Today makes one month for my acv experiment. It’s still bubbling slightly and I do stir daily but my test strip only shows ph5. It smells nice, so should I wait for a bit, add more sugar, or start over? I really want this to work! Thanks!

Brooke Johnson - Hi Booke...it’s so much fun!! Just remember to stir it every day. I know it’s might seem like a bit of a chore for 30 days but it will make all the difference in the world. It’ll really avoid developing any mold on top...and if you stir it every, day after a few days it starts to become a less hospitable environment for mold and that’s how you have success.I stir them every morning as I’m enjoying my morning coffee! Some people have breakfast with champions...I have breakfast with vinegar! LOL!!!😂😂😂 So glad you’re here… Love your enthusiasm! Let me know if you have any questions. I need some help sweet Mary. I am in the midst of making ACV. It is doing good. There are nice white bubbles on the top if I am putting it correctly. I keep moving them every day with a chopstick, the ones on the top are a nice deep brown colour, the ones that I have moved down the white ones don't seem to be changing colour, is there something I am doing wrong or can you guide me what I should do, it is 10 days today. Will appreciate some guidance, thank you

I made vinegar following your citrus scented vinegar process and decanted it tonight. With the orange pieces left in the jar can I start a new batch of vinegar by adding more sugar and water? Or does it need to be discarded?

Will certainly try to make vinager Mary. I didn't know it could be made. But so good with all the peels. I really don't like throwing them out as all that precious oil that comes out. Mary was wondering if I were to make jam or chutney or similar I have some large jars with a rubber seal and a strong clasp. Or can I use any glass jar? Thanking you so much Mary xxx

Hi Patricia, As to the jam or chutney - are you referring to water bath canning it? If you are water bath canning it, you'll want to use jars that are specifically made for canning. You don't want anything that has too tight a clamp because it could explode in the water bath canner. When you water bath can, you put your lid on and only use the ring - finger tight - to hold the lid in place. But you DO NOT want an air tight seal because you want to allow air to escape and then make a tight seal with the lid when it is in the canner. Once you remove it from the canner, you remove the ring because the lid has now made an airtight seal. Does that make sense? I show all these steps in my Three Citrus Marmalade video. Oh thanks Mary for coming back to me. No have never canned anything. I don't think many people in the UK do it. But I might start. What I mean is these jars are maybe mason jars but not sure. The lid has a rubber band on it and closing it there is a clasp that closes it as opposed to screwing on a lid. There must be a name for them so will try and find out. Gosh Mary you are so knowledgeable and I'm sure you would have been good working as a chef. Years ago I just cooked basic food but so interesting now. If I try something new and it doesn't work out I get upset. Now I'm learning about The holy Trinity (I think that's what it's called) or the 5 mother sauces. There is so much information to learn. What I don't do is buying loads of equipment out there, rice makers, ice cream makers, bread makers and the list goes on. And it just gets put in the back of our cupboards. @@patriciagriffiths398 - Oh Patricia!! I just love reading your comments!! They are never too long!! Oh yes - those jars are usually called Fido jars - they are made in Italy but there are many other manufactures as well. Yes - those make excellent storage jars. I have many!! You can see them in some of my video - like the one where I make Elderberry Syrup. I love what you are saying about cooking - it's so exciting learning all these different things. Yes - the "holy trinity" - very popular here in the US in the Louisiana area. And then there is the mirepoix - your onions, carrots, and celery mix. I just dehydrated some and made a video about it. Will post it soon. Oh my - and the 5 sauces - yes - once you learn those you can pretty much make any sauce!! Yes, and no need to collect a tone of gadgets, etc. How true - they wind up in the back of the pantry collecting dust!! The bottom line is you need a good knife for chopping, a cutting boards, a nice Dutch oven, a wooden spoon, and a mixing bowl and you can do A LOT!! :-) You are doing so wonderfully!! I love having you as my friend "from across the pond!" I have visited the UK before and look forward to returning. How fantastic if we met in person one day!! Love, Mary

I've got a question...what if after a month, the ph level is between 4-5. Can I wait a few weeks more until it hits 3-3.5?

Im curious as to how you and Heidi (both my favorites) who ferment alot and make lots of vinegars NEVER have fruit flies flying around or house flies. Everytime I just make one small jar of vinegar I get tons of fruit flies and even when I clean with anykind of vinegar like any citrus and even plain. What is your secret???? Ty.

Hi Joyce, that’s a great question. I’m not sure what the answer is. I live in a hot dry climate and I don’t know if that has an effect on it. But that said, Heidi lives in a cool damp climate. So go figure! But please know I do get some fruit flies...But not a lot so it’s not bothersome. I have not tried this but something that might be interesting would be to hang up one of those sticky strips that attract flies. That may help corral them. What do you think? Love, Mary❤️🤗❤️

You can make a vinegar trap. Poke holes in a lid so they can get in. Sticky traps help too. Boiling water down the sink drain and close when not in use.

Sorry texting twice but if you are not making vinegar with the citrus fruits do you try to extract the wonderful oil that comes out when we squeeze the fruit. I tried with my garlic press but hardly any came out. Many thanks Mary xxx

Hi Patricia, Never Apologize!! I love your comments and please leave me as many comments with thoughts/questions that you want. Your comments are a joy to read!! :-) OK - on to your question. No, I have never tried to extract the oil from the citrus peels. That actually involves a distilling process which might be interesting to try sometime. You would have to simmer the zest in water for a long time (many, many hours as I understand it). Then, once the zest looks very soft, you would strain it out of the liquid it was simmered in and let the liquid cool. The oil from the zest should rise to the top and then you would skim it off and have your "essential oil" in a sense. But this is a very "rustic" way to do it. Distillers are more sophisticated in their techniques and equipment. Hope this helps! Love, Mary

After about 30 days once the solution turns into the vinegar, strain it and decant it into a new bottle. That is your vinegar and you can use it just as it is for cleaning. Hope this helps. Thank you Mary! I was wondering about the not weighing it down. Question: my pineapple vinegar stopped bubbling after about 5-6 days. Is that normal? Or should I add more sugar? My jars are pretty full of scraps. Also, I had a white film on my strawberry vinegar and panicked and tossed it. But now I’m wondering if it was just a “mother” forming? Thank you!

Hi Mary. Thank you for all you do. I am learning so much! Question: my son watches A Chefs Table on Netflix. A chef on the show when his southern grandmother passed away he rememberef her 40 yr old vinegar in the cupboard. He has continued to feed it n keep the mother. Here's my question...why is it black? Is it ACV or some other kind of vinegar? God bless ❤️ Evidently you do not keep up with your comments. Do you? ☹️ I found out myself it's red wine vinegar.... But thanks for all the info you provide.

She has half a million subscribers, making it impossible to keep up with the already free content. Most youtubers who keep up with comments at all (she does), only do so for the first day the video comes out. That's standard for the most gracious content creators.

Okay so I just tried out 3 different vinegars! Strawberry, orange, and blueberry! The blueberry did amazing and turned to alcohol quite quickly and will soon be vinegar I'm sure of it. The oranges did okay for a while and had some bubbles at first and so I fed it a little more sugar, but today it had mold on top and smelled awful! It didnt smell like vinegar or alcohol. The strawberry never really got bubbles at all and started getting this milky scum on top. It too smelled awful and not like alcohol or vinegar. Did I do something wrong? All were done the exact same way and stirred everyday, but the blueberry is the only one that made it!

Hmmm...great questions. You definitely did not do anything wrong. Ferments of any kind - including vinegar - can sometimes be VERY persnickety! It can be SO disappointing!! And if you make them all at the same time, sometimes one can contaminate the other. Sometimes making vinegar with dried fruit can work better than fresh fruit. Experiment with raisins or apricots, etc. - one at a time - and see if you get better results. Keep me posted. Love, Mary

Probably not stirring it enough and the mold takes over. I am new to this but I know that if you want "good bacteria" to grow you need to stir it up in such a way to capture oxygen in the liquid.

I found that if the fruit was not cleaned before peeling, the peel vinegar goes bad quickly.

My vinegar came out beautiful. I put some new apples and put the remainder from the bottom of the bottle on the apples to give them a jump start, added water and sugar to make more. Some people say to throw out the "sludge", it's just a little cloudy, but is this what is going to form the "mother"? I have not gotten a mother in mine yet. Is that normal? It tastes and smells great, and no weird mold in it, just a little light colored sludge that when agitated, it makes it a little cloudier. How long before a mother forms, or may it not form at all? Thank you!

Hi Janet, Great question. You can discard the sludge or put it in your compost pile. Do not worry if you don’t immediately see the mother developing. Sometimes it will just be a cloudy substance. Other times it may be somewhat thick like what you see with kombucha. It really depends on your environment. But either way your vinegar does contain a mother and it is very rich and good probiotics. Hi Lori, I have not tried that but I’m going to have to experiment. I also want to try making sherry vinegar. That is so expensive in the store but if I could make it homemade that would be great. I’ll keep you posted. Love, Mary

Mar, I meed your help. First attempt and I think something went wrong. After a month, stirred daily now has the mush from flesh of apples. I tasted it. Very nice and not strong flavor. Should I strain it again?

My AC has been fermenting for 3 weeks. Is it time to strain? I don't have any PH strips to test it. It smells like Apple alcohol.

I’m so upset after picking all different types of apples washed them cut them up put them into one of those huge jars and not after watching your videos again I totally for got to let the tap water sit to de clorine😢the waster :( do u think it might still work?

Sherein Nasef - You can keep it in a dark place but not in airtight container. Just a lose lid or cap. The “mother” needs air to grow. Hope this helps. Love, Mary🤗🤗🤗

I use a long wooden spoon. Chopsticks just seem too 'pokey' and don't do a very good job of pushing the fruit down.

Great question! it can’t be used for canning because Canning requires precise amounts of acidity which are in commercially made vinegars. There is too much unpredictability with homemade vinegar.
