Hello Matthew. Trying to decide which Mithai to make. Your traditional version uses less butter and custard powder. Why is that? All other proportions are the same. Please help me decide which version is better...lol! Thanks!!

@@matthewsguyanesecooking4601 I wish if I read through the comments before I went ahead and altered it. Custard powder has salt in it, which I just found out :( I love the flavor it add, but wanted to make it to offer some. I substituted a bit of condensed milk instead-don't know how it will turn out but hoping it comes out good. Love you videos :)

@@matthewsguyanesecooking4601 absolutely you can freeze this... once it's fried. When ready to use, thaw and heat in the oven and toss with the paag/syrup mixture
@chitrasingh97044 жыл бұрын
Fry it 3/4 of the way. So that, when you heat it up after thawing it will cook throughout. Then let it cool... then toss in the syrup

@matthewsguyanesecooking46014 жыл бұрын
You need to be very gentle. Use the motion of moving the spoon along the bowl to move them. You also need to shake it at the end so they don't stick to the bowl. Make sure the dough isn't too stiff because sometimes its too flakey and it falls apart

Hi Matthew making these as I write. I’m sorry but these just aren’t what I had in mind. They’re way too crumbly and crispy. One even fell apart in the pan as I’m frying. What could be the problem? I’m thinking it’s just too much butter to flour?
@matthewsguyanesecooking46014 жыл бұрын
You probably measured something wrong. You may have also made the dough too hard. When the dough is too hard it tends to break up in the oil. Make the dough softer
@chandrapersaud96264 жыл бұрын
@@matthewsguyanesecooking4601 actually the dough was very soft. I used 1 lb of flour as based on conversions 4 cups would be. Do you think you can start weighing your ingredients as I find this more accurate.
@matthewsguyanesecooking46014 жыл бұрын
@@chandrapersaud9626 Please try to measure in cups when doing these recipes, as that is what I use. It is hard for me to do pounds and cups because they tend to differ.

I tried this recipe twice and both times it was a disaster. It started to loose in the pan and was all broken up! Maybe you can advice where I went wrong. You have 2 sticks butter which is 1/2 pounds Is that correct. And 4 cups flour which is 2 pounds.
@matthewsguyanesecooking4601 Жыл бұрын
Sometimes when you convert to pounds like that it tends to put too much of something. So try to go based on my measurements exactly, but also maybe you made the dough too hard? When it is too hard it is too flakey and then it falls apart. You also should bring the dough together well (not over kneading it) but bring it together and then let it sit for a few minutes before frying. Please check the measurements one more time because it shouldn't fall apart. This is my standard recipe.

What is custard powder? Where can I find it?
@matthewsguyanesecooking46014 жыл бұрын
It is a powder usually slightly flavored and made of cornstarch. It adds a really nice richness to desserts and makes the mithai melt in your mouth.
