I went home to Trini and I was wondering why all the currants rolls I bought disappointed me. They were all made with "puff" pastry! This is the flaky pastry recipe that I learned in Home Economics in the 1970's. Thank you so much!

Hello Matthew, I am a huge fan of yours, you have helped me tremendously in making Guyanese prasad, Pera, kheer and other dishes, however just wanted to give you some feedback regarding the currant roll recipe. That currant roll recipe is not for our Guyanese currant roll...we had our own currant roll, unfortunately due to the destruction of Guyana we have lost some of our amazing Guyanese cakes. I grew up in Stabroek market in the late 60's and 70's and in those days, we had black cake, white eye, currant roll, tennis roll and a huge variety of other cakes. We also had numerous cake shops in Stabroek market selling these fancy cakes along with the heavenly taste of mauby and pine drink, truly amazing. Unfortunately we have lost a lot of it now. Anyhow, the closest thing to Guyanese currant cake that I have found so far is Eccles Cake ( it is a British cake) and I suspect that we got it from the Brits. There are many recipes for Eccles cake on youtube and you would make me very happy if you tried making it. Look forward to hearing from you.

It looks to be a flaky pastry crust with a currant filling and it is made in a round shape almost like Chinee cake. Also what exactly is white eye? So many people have asked me for the recipe and I really want to make it. I look forward to hearing back so I can make these recipes on my channel

@@matthewsguyanesecooking4601 Thank you for the reply Matthew, Starting with the Guyanese currant roll, This is from memory of over 50 years ago, so please forgive me if the dimensions are slightly off. The cake was rectangular in shape with the following dimensions , length about 6 inches long while the width was about 3 inches and the thickness about 1/2 inch although the British version appear to be round. The top pastry resembled that of a flakey (local American cake) with a spreading of large sugar crystals. The inside of the cake was wet and had a sprinkling of raisins and a light spreading of cinnamon. Not sure if this description helps. Secondly, for "white eye" it was also one of my favorites. It was the size of a small tennis roll and also had a light sprinkling of large sugar crystals on the top of it along with a round white spot right at the top (middle) of the cake ( not sure what they used to make the white spot, but it almost seem like white colouring). The texture of the cake was solid both inside and out, with a very light brown appearance. It was one solid cake, no filling and was medium sweet. Thank you for taking up the challenge, please let me know if I can be of further assistance. I also hope that some of your followers may be able to add any details that I may have omitted. It would be so amazing if you can recover these lost recipe Matthew.
