I just made your pork belly in the pressure cooker. I have made pork belly sous vide, slow cooked, and any other way I could find and was never able to achieve the melt in your mouth texture I’ve had in restaurants. Today I have achieved bliss. This is by far the best technique. The pork literally melts in your mouth and the sauce is exceptional. Thank you so much. I now can have delicious pork belly in half an hour.

Delicious, I got pork belly by mistake and I didn’t know how to cook it, I tried your recipe and is simply delicious. I didn’t have rice wine or bourbon or whiskey so I tried spiced rum and I cooked it over the stove, it took two hours but it was worth it. I made brown rice with carrots and peas because is all I had but it came out delicious.

I used white wine which is not a strong spirit. Strong spirits are flammable. So that sounds somewhat dangerous

That looks delicious! I would only change a few steps after the pork belly is cooked in the pressure cooker: take the meat out of the pot and set it aside, pour the sauce into a fat separator, pour the fat-separated sauce back in the pot, reduce the sauce, put the pork belly back in the pot with the reduced sauce, mix and heat the pork belly through, then garnish and serve. Awesome.

I have made this recipe twice… I tweaked the braising liquid a bit and finish up with the sauté and reducing the sauce on the stove top and I can confirm that using a pressure cooker makes the pork SO MUCH BETTER! It melts in your mouth! The first time I made this I had too much pork and couldn’t fit it all in my pressure cooker so Half the batch I braised in the oven. It’s just night and day what the pressure cooker does. It’s amazing!

You've convinced me to get a wok, electric pressure cooker, I just ordered Chinese cooking wine and dark soy sauce. As an aside, I think I would have surprised Confucius, I invented eating with 3 chop sticks (only benefit is for eating fried rice!). Used to frequent a Chinese luncheon, (a waitress there sat with me to practice her english) and when she saw me eat with 3, she loudly screamed!

If you have a Costco business center near you or even a regular Costco, it should be around $4/lb in the US. Costco Business center in my area is $3.29/lb for the slab and comes skin on or off. Regular Costco’s generally only have skin off.

Sorry, but i believe that you are way off bae with the time required for pressure cooking. Yes, a 2-3 pound pork ROAST takes between 30 and 60 minutes but once you cut a pork belly into small pieces and pre-cook it the amount of time should be reduced drastically. I tried this recipe and did the 30 minute pressure cook and the result was charred inedible charcoal-ike bits in the cooker. I tried it again but reduced the time to 8 minutes and the result was quite good. I do like the fact that this is one of those that can be prepared, served and eaten in a relatively short time frame.

Looks great. Will have to try. However, why use pork belly and then skim off the fat that was rendered? If you don't want the fat, then why not use pork loin? That is not a slam, but a serious question.

Skimming off liquified fat. The belly still has some of the flavorful fat on the meat, where other cuts won't. Plus it's a springy kind of texture with pork belly you won't get if you use shoulder etc

You should try using a folded paper towel to soak up the grease. It works really well and is much more efficient than skimming. This dish looks delicious!

They used such fresh vegetables so we really miss it. We choose not to go to the older restaurants in town because we were so spoiled. I have a 6-quart Instant Pot, and it is recommended to add at least 1.5 cup of water or other liquid for every use. I don't see that you needed to add that much liquid in the video. Or did you? I love how the dish turned out, so glossy and yummy, and without having to spend extra 15+ minutes to reduce the sauce.

It depends what you're cooking. Some foods will create liquid. In this case the pork will produce liquid.
