Microwave Marzipan | Easy 4 ingredient recipe | Kravings

Traditionally, Marzipan is made by cooking all the ingredients over a low flame. It requires your undivided attention and a lot of muscle power. A decade or so ago I figured out a way to make this relatively easily in the microwave, and this is the recipe I will share with you!

Here are the ingredients and steps to make this recipe!
Ingredients
100 gms(3.5 oz) ground almonds or almond meal
200 gms (7 oz) icing sugar
2 egg whites (40 -50 ml)
2 drops almond essence
Instructions
Process everything together with half the egg white and then process again
Take the mixture out and add to a microwaveable plate, cover with cling film and zap in the microwave for 10 secs, 3 to 4 times
Remove and scrape onto a board to cool
Once cool add food colouring and knead adding extra icing sugar if sticky
Divide and roll into balls and then press into the molds

Thank you for such an easy recipe. I gave it a go today but it was still runny. Added more almond flour and it worked. It was not too sweet and we all enjoyed it :)

Loved the recipe! Found it very easy. I don't have a food processor so do I just kneed the dough with hand ? Would that work ?

Yes it would. I find the food processor cuts the time considerably. Within a minute the dough is ready. But you could do it by hand! If the warmth of your hands makes the dough sticky, add some extra icing sugar.

Yes you can - I keep it in a tin with parchment paper in between. It's pretty cold where I live in Dec.

Yes add more ground almond ... also allow it to cool. Spread it in a thin layer ... as it cools it becomes less sticky.

I love using cashews but because they are so expensive I use almonds. Proportion is the same - if the dough is damper because cashews are oilier, just add a little more icing sugar!

Karen can you please share how to zap in microwave as Ive always cooked on gas in the past...This time I tried but the dough was to soft to handle and form...I'm missing or doing something the wrong way when zapping in the microwave process that. Hey Nichelle - I do show it in the video. You cover the marzipan with cling film and zap for only 10 secs, waiting in between for about 20 secs. I do this 3 times.

Yes you can! Just know that Cashew has more oil content, so you may need to use more icing sugar

Cheryl, depends on where you live, it's cold here in Canada so I can make it upto 3 weeks ahead. You have to make sure though that it's stored in a dry airtight tin and you cannot over stuff the tin as they can get stuck together with the weight. I add them in layers with parchment paper in between.

Hi James - you certainly can. Just remember that Cashew nuts are oilier, so you may need to adjust the icing sugar to absorb that excess oil.

I would say depends on the room temp. I live in Canada and store it outside in a tin for weeks, but I know in India this can only be made a week before as it can be quite hot and humid.

Do the exact same thing with Cashews. These are more oily so you may need to ad a bit more icing sugar

You got a thumbs down for only mentioning a microwave. Heating is never required when making marzipan. You are also not making marzipan but icing with some ground almonds in it. Simply disgusting.

A binding agent is used. We use egg white and it’s heated so it’s not raw. It’s damn delicious

@@KravingsFoodAdventures wrong! Nobody who makes real marzipan uses a binding agent. Marzipan doesn't need a binding agent. A bit of rose water is enough. Otherwise just almond powder and icing sugar 50:50.
