Nearly 59 and still not tasted a mince pie. I couldn't get my head around minced meat as a sweet. 😂 I may be braver enough to buy one this year, (having witnessed your delicious looking mince pies) just to see if it suits my peculiar palette and dietary requirements. (Ooo don't I sound all posh and la dee dah!) I've been a subscriber for the equivalent of 5 mins and I'm hooked on watching you, listening to you, learning from you, quietly chatting with you (I answer you without thinking) and getting to know the cats (I'm allergic to them but they are still gorgeous), your home and farm speak to my heart. Kate, you have a grace, warmth and friendliness that feels like we were once good friends who just haven't seen each other in a long time. That's a true gift. Thank you for making your videos. Thank you for the perfect imperfections that make you so approachable in these videos. Most of all, thank you for the beautiful smiles, cheeky grins and bubbling laughter that you share. I can't help but "catch" it from you. I truly wish I could be a patron of your channel. If I could give a dollar a month to the channels I know to be worth being a patron to I'd have no pension left. 🤔 If I started a channel of my own... I'd be owing patrons money! 😂😂😂 You are a joy, Kate. Thank you for making me think about my life differently. 💜🦉🇦🇺🌸🌺🌷🌹🌻🌼💐🌾🍀☘️🌱🌿

I hope you have tried one now? Mincemeat pies no longer contain meat since about the late Victorian period. Now most contain beef suet, grated fat from a cow. Some jars say no suet and have other fat in.

I make these little mince pies every Christmas. I have my mother's little tart pan (sort of like muffin tin). I usually only make these and shortbread. These freeze well and are delicious with a wee dab of vanilla ice cream on top. I always send my son a package of these. Brings back lovely memories of my Mum.

They look lovely. And with almonds and vanilla in the pastry, they must taste lovely, too! I think lard in pastry/dough can actually be quite nice - good old recipes for Czech buchty often have it, for example, and I've had pretty nice Christmas cookies with it. But it probably depends a lot on (aside from questions of vegetarianism) what the lard itself is like. If lard in the English-speaking world is more like the nasty over-processed stuff sold in hard pressed bars in shops here in Czechia than like the nice, soft home-processed stuff you either make yourself or get in tubs from smaller butcheries - then yes, that would be nasty to have in your pastry. :P :-)
@angelaevans86324 жыл бұрын
Today we tend to avoid this in pastry making but my mum and gran always used lard and their pastry was superb. ( so you’re right Beth lard does work well in pastry making). I can remember the taste today and the texture was also crumbly. I’m sure that after the war, for my gran particularly, butter was in short supply so you would never use it for pastry. My mum never wasted stale bread either. She would make a big tray of bread pudding and all my friends would come over for a slice after a long day of playing outdoors. People used what they could get in those days. If my husband wasn’t a vegetarian I’d probably use lard today.

I'm saving your recipes to use. My dad was stationed in England during WW2 and ate everything. Mince pies, lemon curd, marmalade and a few other things. When he was alive I made all his favorite English things. He made shortbread cookies, made a dent in each one and put in marmalade. Like square thumbprint cookies. I only got one because he couldn't spare more than two or three. I think the one I got was for supplying the marmalade. He ate the rest. Merry Christmas and a Happy New year to you.
