I think there are many techniques for curing in Japanese cooking. Curing with salt, vinegar or using Kombu kelp. How long Chefs leave the ingredients to cure is also very important. 1. I'll take a pass on the cod sperm 2. I almost fell out of my chair when I saw how much caviar he put on top 3. I am 200lb man, eat a lot for my size, and that seemed like a lot of food even for me 4. That meal is easily>$500 in NY or London

It is a lot of food! But when you’re there eating, the Chef does pace it nicely and perfectly, so that you won’t feel too stuffed during the meal. You can also ask for less rice if you feel the food is going to be too much 😊 I know in the US/UK Japanese food can really be overpriced. Same in Bangkok also! In Japan it will be so much cheaper. I almost fell out of my chair too because of the caviar 🤣 but it was soooo delicious!! Please try cod sperm if you get the chance. You’ll be surprised how good it tastes! 😋 Thank you for watching! 🥰
