He may need the $ more than his opponents for retirement. If he's smart. I can't honestly say I would retire if I won, you HAVE to go for back to back! Single taps shouldn't be the end of a fight, it should be three or more within a few seconds (one to three) like in pro wrestling because it's easy to say they didn't mean to give up by tapping once, and while they might give up tapping twice it's a rare thing and can be missed by the referee (Brock Lesnar submitting Undertaker at SummerSlam 2015). Seriously though a lot of fighters won't release the hold unless the referee tells them to an I think it's better to do that after three or more tapes because it's usually a rapid thing and not that hard to miss.

There really needs to be a set number of times to register as a tap or some way to distinguish them. Like, in number ten the referee let Semmy(?) "tap" once and didn't register it as a tap out while Chael "tapped" Anderson's leg once and the referee was all over them stopping the fight. He even got docked by that "verbal tap out". Despite my obvious bias because of my love for "The Undisputed and Undefeated" but the sheer fact that situations can arise where a tap out is called into question is ridiculous. It's up there with round scoring as an issue in the UFC and MMA in general. Judge scorecards should be open and a tap should be a universally recognized gesture that is easy to perform and impossible to mistake.

If the ref doesn't stop the fight it doesn't count.

As an admittedly non-fighting expert it is really hard for me to tell what is a tap and what is someone searching for the face/head of the person who has them in a chokehold, so they can drop some attacks on them. *shrugs*
