These are really good! Chris Cooking Nashville has a carnivore tortilla recipe that has the perfect texture, and none of the seed oils of commercial Keto tortillas. Both the feta and ricotta are very tasty.

GREAT idea, I see the pizza version making an appearance in my kitchen very soon. I have some leftover fresh mozzarella I want to use. I’m also thinking of taking an ‘egg roll in a bowl’ recipe with small or chopped shrimp, and using it to try making an actual egg roll using this method. Another idea that I had is to try a spanakopita inspired version (spinach, mint, feta, garlic, etc). AND, around the holidays brie and cranberry with sliced almonds; although, I would probably make them more appetizer sized by using the small street taco size tortillas. My husband was listening from the kitchen and suggested a Philly Cheesesteak version.

This video gave me an idea. I made pizza rolls, but instead of a low-carb tortilla, I made the cottage cheese wrap and used Italian seasonings. After baking it and letting it cool. I added pizza toppings and rolled it. I cut it into 4 rolls and each is a serving.

I’m now having a small breakfast. At 81 I was advised by my doctor that I probably should break my fast earlier. These “egg rolls” should work fine. Might try with well drained cottage cheese and blueberries. Just because that’s what I have right now.

La Bandarita and Ole Xtreme Wellness are my two favorite grocery store tortilla in terms of price, flavor, and minimal glucose response. I think Ole is thinner, which would make them better for this, though I haven't specifically tried them in this application.

I've been using low carb tortillas since the early 2000's. Low carb tortillas are amazing and only get better.. Steve, the Costco Chicken Roll Bakes either changed or disappeared during the pandemic. They were made with a regular (pizza?) dough. I made mine with the Cut Da Carb flat bread. Season chicken breasts well with S&P and Garlic pwd, and sear in oven proof skillet both sides, add 3/4 c water and finish in oven at 350, cool. Other ingreds: Caesar Dressing (I make Papa G's low carb version), shredded parm, provolone and mozzarella, minced green onion, crisp bacon. With flat bread horizontally, spread about 3 Tbsp dressing in the middle (all ingred go across, avoiding ends that fold in), add about 3/4 c diced chicken, add provolone, chopped bacon (approx 2-3 slices/roll), green onion, mozzarella and an additional small amount of dressing. Fold ends (kind of burrito style) and roll. Seal edges with beaten egg. Put on parchment lined pan, brush entire roll with egg wash, add sprinkling of both parm and mozzarella. I typically sprinkle on the Everything Bagel seasoning. Bake at 400 until golden brown/crisp. Rest, slice into two pieces across the middle.

I make the vietnamese pork and shrimp filling, shape it like a small egg roll, precook them by steaming or baking. When they are cold I use a keto breading to deep fry them until very crispy. My keto breading is 1/3 cup finely grated dessicated hard cheese (Kraft is ok) + 1/3 ground pork rind. I use egg white for dipping them before breading....works great every time

@@prunelle19.... That sounds really good, thanks for sharing your recipe. Have you ever tried Liviva DRIED shirataki rice? Portion is 7 gr of net carb and it is so easy to make. Boil equal water to rice, then add the rice, cover and let sit for 10-12 minutes. I put a bit of salt and butter. It smells like basmati. It is a real gamechanger, I bought the 1kg box when it was on sale....tried it ...then bought 4 more boxes.

I feel that these are kinda like Totino's Pizza Rolls in that you have sort of a window of opportunity for serving these where they'll be hot and melty on the inside and crisp on the outside. I suspect that the longer they sit, the grease from the pepperoni will start to soften the tortilla.

I float between 20g and 50g of total carbs per day and stay in nutritional ketosis. Periodically, I'll go higher carb for a special occasion or to do some sort of blood glucose testing, but I can't remember the last time something like that knocked me out of ketosis.

I'd encourage you to watch videos by Dave Feldman and/or Dr. Robert Cywes on LDL/keto. There's a lot of new science that says that LDL isn't really an issue if your HDL is high and triglycerides are low. If your doc tries to put you on a statin, I'd say "no, but let's check again in 6 months".

Would these work with your 90 second tortillas?

I doubt it. I think they will be too thick to roll and fold like this. In fact, I tried it the Ole Xtreme Wellness tortillas and it required tooth picks to hold together. So far the best tortilla I've found to make these with is the Tumaro Carb-Wise brand.

Could you repeat the redundant part of the video for me? BTW...iffin' you like the pizza roll one try a Philly Cheese Steak version with Steak-um meat(Philly Steak brand is El Garbago) and mozz or provolone.
