Cooling of cooked starch is known to cause starch retrogradation which increases resistant starch content. Resistant starches can improve your body's ability to respond to insulin. The higher your insulin sensitivity, the better your body will be able to handle high blood sugar. This means you'll have a lower chance of getting conditions such as type 2 diabetes, Alzheimer's disease, and heart disease. Cook potatoes, pasta, beans, and rice and let them cool in your refrigerator overnight forms this resistant starch. Reheating these items are fine.

It creates a chemical caused butyrate which increases GABA, the master neurotransmitter that balances the other neurotransmitters…..including dopamine. Read a couple months ago that low dopamine levels are the reason so many regain weight after losing a great deal…having enough dopamine helps keep sugar & junk food cravings at bay.

Favorite applications for me: potato salad (dressed in olive oil/Dijon vinnaigrette) , fried rice (only leftover rice works right anyway), and this shredded potato fritter/pancake that makes a ton and keeps days in the fridge. If you balance the carbohydrate with plenty of vegetables and/or proteins a decent portion will still only contain net carb in single digits or low teens, and that's not even counting the conversion to resistant starch. A cup of my potato salad has @10 grams or less. Here's the fritter, adapted from Le Cordon Bleu(!), because I do not wish to separate the eggs and beat the whites to stiff peaks. I guess they'd be a little lighter if I took the trouble but I prefer simpler. 2 small potato, grated, rinsed, drained and squeezed dry 1/4 c cream cheese 2 eggs Pinch dry mustard Blend the eggs, cream cheese, and mustard, then mix in potato. It's like a runny batter. Pan fry by spoonfuls. Makes a dozen or more. It's nice to add chives or onions, but not necessary. I've added a little shredded zucchini too. The batter keeps in the fridge too. 2 of these would be equivalent to 1/6 of 2 small potatoes, roughly @ 8 g total net carb, and even less, with prebiotic resistant starch, if refrigerated overnight. Very satisfying in the case of a carb crave.

❤ 68 yow.... ladies... I found out that using Noxema as after bath lotion can keep you cooler during hot flashes. The eucalyptus & menthol give some relief at the first sign of sweat! 😂 or that glistening glow🎉

I just had a massive epiphany moment! - this explains perfectly why people who tend to eat most of their home cooked meals at home are less fat than those who eat out regularly. This is because when you eat out, your starches are always hot and fresh. Yet at home you usually cook your starches in bulk and refrigerate them!

@@lilishyta-ep4wr If you mean "heat", yes. I cook the rice, potatoes, pasta the day before, then refrigerate over night. Then I heat up what I want for the next day's meal. Also, I freeze or refrigerate my bread. then heat or toast when I want some. I was amazed at how well it works.

Regarding refrigerating rice & other starches, that’s great to know! On average I’d say I eat rice at least five days out of seven! Thank you Dr. Mandell! At any number of medical schools I think you’d make a GREAT professor!

Personally I cook my rice,and bread 🍞 after it cools off, l divide them up and put in the freezer and them remove when needed and it's even more less starch restiance, from an old video of his dr madell and l started to see my blood sugar levels started to work out well

For everyone that did not listen to the whole video once you at refrigerated or Frozen the rice pasta bread potatoes Etc it is fine to heat them up and then it will still stay resistant if you do he didn't say you had to eat your potatoes and rice is popsicles I've read that can we heat it up afterwards question 25 times in these comments

@@mimi1o8 yeah I think somebody lied to you I always make a big old pot of red beans and rice and I freeze it in single-serving Tupperware and I pull it out as I need it for like 6 months straight I've done that for years and it was never toxic

My A1C was 7.0 in July of last year. I took on a low carb, healthy diet, including refrigerating/freezing breads and other starchy foods and within 5 months my A1C was reduced to 6.0 and I lost 15lbs. Dr. Mandell and his ideas have been a large part of my success. THANK YOU!!!

Very informative, I eat a lot of rice and sometimes I refrigerate the leftover rice and eat it later. I don’t have a weight problem but I know some rice eaters that do, I will let them know this and let them know where I got the info from. Thank you.

Interesting! It reminds me of how we used to eat rice in those days when we did not have refrigerators. Cold water to soak the cooked rice overnight was a great concept. It gave us so much energy for the day when we take it for the breakfast!

When we didn’t have microwave ovens to reheat food quickly and no air conditioning either I didn’t want to heat up the house in the heat of the summer using the cookstove and would eat some leftovers cold, including potatoes and rice. I think that’s what kept my weight down when I was younger.

I have read several articles and studies on resistant starch. And yes ❣️ you simply explain it while popularizing its entire refrigeration process (freezer or cooler) in a beautiful way. I love rice and pasta from time to time. Thank you so much ...

Incredible. Usually they tell you to cool and reheat to make resistant starch. But freezing is another way. Awesome!

It’s almost magical how quickly eating a good level of resistant-starch foods will change the appetite to a healthy one. I did an experiment 5 years ago after reading about this and ate some leftover cooked potatoes and basmati rice cold the day after cooking them. A little hard to get used to eating them cold but my gut bacteria changed in less than a day. Within a day and a half I lost the craving for anything with sugar or junk food like chips and also weaned myself off of wheat (and the pain in my hip joints was gone within 2 weeks after that). I started craving foods like smoked kippers, spinach, green olive, capers, and other low-carb foods to go along with the resistant starches. Lost 54 pounds in the middle of winter and didn’t involve any effort.

Also ate sweet potatoes, tapioca starch in muffins, lentils, beans of various types, and fava bean soup on a regular basis.

@@trumpeterswan4177 no if you reheat it then the resistance starch level goes way back down. There are different categories of resistant starches and one category you cook, chill and consume the food cold.

​@@trumpeterswan4177You're not mistaken in thinking you can heat the food after cooling it overnight in the frig. To quote Dr. Mandell, "Cook potatoes, pasta, beans, and rice and let them cool in your refrigerator overnight forms this resistant starch. Reheating these items are fine."

Thanks for this great tip. I cook and refrigerate beans and rice all the time! We bake bread and put one or two on the freeze or chuck bought bread in the fridge too to prevent spoilage in our Caribbean heat. It's good that you verified I'm doing the right thing!

THIS presentation, Dr. Mandel, is your single, BIGGEST contribution to my life. When this news came out I tried to share it far and wide, but all of my sources were too "sciency" and filled with too much jargon. My family really, REALLY needs to hear it. Diabetes and dialysis-related infections literally kills off each generation. Thank you. I will continue to TRY to spread the word as it's now in the family of almost all I know, not just those with "bad genes." The reach of Diabetes in this country is staggering. Thank you :)

I only have 2 rings on which to cook so I always cook the pasta, rice, potatoes, etc before I cook the protein, then re-heat it in the microwave. SO, in future I will cook the carbs the day before, keep them in the fridge overnight, then reheat the next day. THANK YOU SO MUCH !!!!

Appreciate this advice, sometimes we eat rice or potatoes on the second day, great to know it’s not only acceptable but recommended. Same with bread. However pasta as an Italian, I can only eat fresh;)
