Delicious in its flavour and rich in lentil protein, the Nucchina Unde or Nuchinunde makes for a nourishing light meal if you are craving something steamed and delicious. In this recipe episode, Sreedevi makes light work of this traditional Karnataka dish and serves it alongside a comforting majjige huli, a simple yet punchy asofeotida oil, and a snacky upma version as well. These are perfect to rustle up in your kitchen, either for a satisfying lunch or an evening bite. Stay safe and happy cooking.
Ingredients to make Nucchina Unde
Makes 20 to 25 dumplings
1 cup toor dal
1 cup Bengal gram
1 cup split green gram
1 tsp cumin seeds
1 tsp peppercorns
1 tsp turmeric powder
½ tsp asafoetida
1 cup grated fresh coconut
7 to 8 green chillies
25 to 30 curry leaves
A bunch of coriander leaves
Water, as required
Salt, to taste

Here I need to add my personal experience when I was young. My grandmother used to make upma out of leftover idli's, pesarattu or adai for us for evening snack. Remembering that after seeing Shree preparing upma from nuchinunde 😊.

Beauuutiful ! 💗 Loved the simplicity of your wife (and of course you always) and the authenticity with which you share, (no overacting unlike many others on KZbin these days) make it very beautiful to watch even though it's a little lengthy video otherwise I usually can't watch a 5-6 minute video too if it doesn't seem genuine. Also, you both seem very comfortable with the camera, just like you are talking to us if we were sitting in front of you, not like acting something for the camera. These are all the things that I loved and appreciated in this video. And last but not the least thanks a lottttt to your wife for sharing her traditional special recipes... And thanks to you too for appreciating her efforts and motivating others to help their wives/moms in the kitchen. That really helps us respect not just the food that we are eating but also the one who makes the efforts to prepare it.

Sir and Ma'am we always knew about Nucchina Unde with Majjige Huli. What a combo. It is a weekend staple - prepared and savoured on many weekends in our household. However, the Nucchina Unde Upma made from leftover Nucchina Undes is a totally new discovery for us. Never knew it can be used so intelligently and made into a delicious upma. I am sure it's a 'flavour bomb', like Kripal sir is used to describe. I'm going to make it specially, the next time we make Nucchina Unde. Thank you so much Ma'am for bringing us delicious yet simple to make and highly nutritious traditional Brahmin foods. Now I know why Kripal sir choose to be a food vlogger and connoisseur. Thank you once again.

He lovingly accepted the taste of it... My in-laws loved it with majjigehuli.😀.... Measurements to the T , Diagrams , and the sound of food will mesmerize you. *Village cooking - Kerala* is another treasure which seldom people know. A log where the cook makes food that one may trash - Yucca Rinds , Jackfruit skins , Jackfruit seeds and much more Her stone flat grinder ( Aami kal ) is where the spices mingle which will then sizzle in the clay pot for the ultimate coming together of flavors . The video graphy is what makes this a show stopper. The sound of cutting the vegetables - where the knife meets the vegetable .The sound of the two pieces of stone that comes rhythmically together in grinding the spices , and the cooks few words in between are the pleasures of watching this channel. If you are *looking for simplicity of cooking personified* village cooking- Kerala is the one . My 2 cents .

I instantly liked Mrs. Sridevi . She seems to carry a very elegant personality. Very humble , simple , polite and down to earth woman with no drama or that hungama like other so called chefs do on shows . I know this man but the very first time I saw his wife cooking soo beautifully and presenting all those traditional not so popular delicacies on media. I started enjoying her cooking and his description. Now I realised y they got together 😊. We appreciate your effort . We request you to present more such homely and healthy recipes that we could cook n enjoy on daily basis .. # Simple homely recipes with that traditional touch. I just love Sree Ma'am..she is so inspirational in her quiet smiling respectful demeanour...being a manglorean brot up in Mumbai I always wanted such recipes which we don't fynd anywhere except from aunts....these are the recipes that our parents were brot up with n they explain the general health n longevity of traditional Mangloreans...the hair remains dark ryt into their eighties...no diabetes..heart problems..full of stamina...ever enegetic

RainDrops, “coconut oil “ where did you get the false information from. We don’t cook in coconut oil. It’s only people from the state of Kerala, and some families near mangalore and kasaragod who use coconut oil for cooking. People in south (except Kerala) use more of groundnut oil, sunflower oil and sesame oil. Plz ignore this message if you were suggesting but not thinking that South Indians use coconut oil for cooking. I responded bcz I’ve become intolerant after dealing with my friends especially from Delhi, MP and Gujarat who think they know everything about south after watching Shahrukh’s movies. (Stereotyping)

@Shridhar shettigar , that’s what I said. “Kerala and Areas of Karnataka near to Kasargod such as Mangalore.....”. I mentioned it bcz to clarify the stereotypes some Bollywood movies attribute to south India. One of those stereotypes is “all South Indian use coconut oil for cooking”.

I did try this. 1st time, I ended up making the dough very fine. So I added some finely chopped onion, grated carrots and Fenugreek leaves. I still couldn't make dumplings but made it like idlis. My mom was over the moon having it

सुनिल के The British has left . But calling people - Sir and Ma'am is affirming the class structure that the British Instituted . The Master and Servant ? / The slave . Definitely the ego gets puffed up . Our Indian Caste structure is bad enough. We can address them by their names and that is Respect. For eg : Almost 25 years ago We worked in an American company in India and We addressed each other by their names - from the CEO to the Person who sorted the mail . The CEO instituted this culture in the organization. Just my 2 cents .

I made this at home today with some variation, i.e. I sauteed some mustard seeds, curry leaves, hing & mixed to the batter with extra chopped coconuts and onion.. overall taste was great and texturally it was fantastic as you bite into chunks of coconut, not to mention it is very healthy!! Thank you for sharing this recipe....

U shud continue this series.. Am loving Shri mam's recipes.. Am from Karnataka and living in USA.. Recipes are authentic as this gives so much of hope that we can still carry our tradition along... I tried Rasam.. the combination of telugu and Tamil was at it's best.. my husband from Andra and he thoroughly enjoyed the Rasam. This dish is called "Bhedake"at Khandesh(Jalgaon Maharashtra, Bharat India) We add in this mixture of soaked lentils for variation Chopped Onion Methi-Ghole Chival wild vegitables which adds in the nutritional values, and steam.We don't shape them like buns as in the shaping processes, air in the mixture gets out and after steaming the texture of the bun becomes hard.I pick the lump of the ground material with grip of five fingers and put it in the double boiler to steam. Other variation we do in this dish is,we rap the shapeless bun in finely rolled Chapati,and steam(like momos) Cocum caree,curd salad , is menu-complete lunch. I am glad that you introduced this dish to people.

I cannot get over how well you describe the taste of every ingredient which goes into preparing a dish. The idea of your endeavor to highlight the traditional foods is wonderful, especially, now, because we have been influenced by the western eating habits and pretty much forgot about our traditional foods and their numerous health benefits. From the lentil stock left over, we can add tamarind, jaggery and other things and make a sweet sour chutney. That is typically made with Nucchina Unde

Sir I live in Bengaluru, and once in a week I visit Hatti kaapi for this delicious and healthy breakfast or snack. Never imagined this is so easy to prepare. Another of my favourite dishes from childhood! We are stuck in M'lore for a month now, thanks to the lockdown. I'm unable to cook anything but the very basic stuff due to the limitations in the serviced apartment we are staying in. I just can't wait to get back to B'lore and cook all these delicious recipes that Sree has been sharing!! There's nothing comparable to tasty, simple, delicious and comforting homemade food. How much I miss home! Sigh!! 😩😩

*Food is not counting* calories , carbohydrates , protein or starch . If we are thinking about it and our Great grandparents did not think about , isn't there something *wrong in our thought process* Have you heard of a person who did not have food to eat use the same language ? That's the problem with gourmet on the road - INDULGENCE and Ungratefulness ? Food is medicine , didn't some body say that rightly ? - coming back to the food being prepared , ever wonder the *benefits of stone grinding* ? 1) stone grinding does not pass heat to the lentils, which is what an electrical grinder does and we take it lightly ? 2) stone grinders have a wooden patch which allows the coarse batter to aerate while grinding hence traditionally stone ground idlis are light and soft. 3) lentils are packed with fibers and good fat is mandatory . Hence the Ghee tadka . A Good Quality asafoetida lends the flavor . Too many adulterated products on the shelf ? 4) lentils and Curd go together , a no brainier :) proteins require a digestive , which is in the form of *curd which helps the *iron* to get easily *absorbed* into our bodies 5) does cooking in traditional vessels help ? 6) does chopping the vegetables with an iron knife / botti help . Have you put a thought as to why the traditional botti cut the vegetables in the reverse order ❓ We love how the Kannadiga ( the vegetarians ) make lentils , legumes and the vegetables ! The Gujjus make the muthiya with vegetables and lentils with dry spices . The privileged southerners are rich with their fresh green spices :) And We envy them . When Junk food and processed food ( the early 1800's ) came onto our plate , nutritionist started getting jobs . Otherwise our farmers were our Nutritionists and , they held the key to our health . They knew if the rains would be less the state of the lentils would be sorry. The reasons for soaking , washing , boiling and lending its flavor was done by cooks , which made eating food an experience that no gourmet cooks can take pride in !:( The Bengalis have an order of eating the vegetables . Isn't it the French who started the gourmet experience ? - That's a different discussion . There is an interesting book written in 1932 about farmers . Google it up ! Thank You

If I may request something of Shree, since we have another fortnight of lock down in place, would she be willing to prepare the Raagi Muddhey and Hurali/Soppu Saaru for us? My mother who has been gone twenty long years now used to prepare it at our Mumbai home on some Sundays. It would be wonderful to see that come alive again on screen though Shree's well trained hands.
