For the stripes, the main reason is because you get both the cooked down sauce and you get the browning and bubbling of the cheese as it cooks. The style is very similar to sicilian style pizzas with variation due to temp and availability of different things such as cheeses. Due to Detroit's heritage as the place for car manufacturing, the 3 rows of sauce are referred to as racing stripes...

Detroit style pizza is the absolute best! I was born and raised 10 miles from beautiful downtown Detroit. There was a Buddy's Pizza near my home and we all loved going there for pizza. Detroit style pizza has gained popularity in recent years and I'm so happy to see that people around the world are enjoying what was one of Detroit's best secrets. Thank you for highlighting Detroit and our wonderful pizza. Detroit has had a bad reputation in the press for far too long. The city has made great progress in recent years and is once again attracting people from all over. If you put toppings on your Detroit style pizza, put the pepperoni on the dough before you put on the cheese, then the rest of the toppings on top of the cheese, then sauce on top, thats how Buddy's does it. Good Detroit style pizza is really, really good.

FYI tip, you can often need more flour in damp climates to make up for the humidity. You can always add small amounts of flour as you go. Of course you do need to know what texture or consistency you desire

When the dough sticks to your hands like that, grab another pinch of flour and rub it on your hands. It will begin to release the sticky dough but you may need to do it a few times.

looks great! if you want to elevate the flavor a little more, try putting the cheese over the entire top of the pizza and all the sides, you shouldnt see any crust, and when that cheese burns against the metal pan it creates a burnt cheese flavor that gives the pizza a whole new dimension.

Buddy's Pizza is the most popular Detroit style pizza place and they have been making this pizza since the 1950's and it's still delicious. The three strips of sauce are authentic and adding toppings like pepperoni and sausage and veggies are also common. It also contains something called Brick cheese which is more like a Monterey Jack cheese. That looks amazing.

Flour your hands and rub to get sticky dough off your hands. Flour a cutting board and knead with the heel of your hands and just sprinkle just a bit onto the cutting board when things start to stick. It's all very tidy this way!

I have a coupon for a Detroit-style pizza, and through the past work week I was thinking of using it this weekend. My appetite has been practically zero for a couple of months, thanks to a sneaky case of pneumonia that keeps moving from one lung to the other, back and forth. This week I thought it was finally vanquished, and that decadent pizza pictured alongside the coupon seemed to start looking really good. Then, surprise!, another relapse yesterday and once again I don't feel like eating pizza or much of anything else. But you Magnificent H's came to the rescue just in time with this video, so I can enjoy watching YOU enjoy Detroit-style pizza this weekend, while I rest and drink vegetable broth and try to get better -- and save the coupon for later. 😋

As a former Detroiter: Not all Detroit style pizza has the sauce on the top, that's a particular style from a particular restaurant (Buddy's). What is necessary is: 1) square or rectangular, 2) thick, chewy crust with a crisp bottom, 3) cheese going ALL the way to the side of the pans, where it gets brown and crispy, 4) if you can get it, "brick cheese' (which only comes from Wisconsin and is difficult to get outside of the midwest, let alone outside of the country) blended with mozzarella. Next time, instead of a baking sheet, use a metal roasting pan. the higher sides do make a difference.

as a native Michigander (someone born in Michigan) the key for Detroit style pizza is the dough and the cheese all the way to the edge with that crust that forms when baking if you want to put sauce under the cheese, as far as i am concerned, it does not mater tho the oldest way is how you have done it, but if you order it in many places today it has sauce under the cheese all over the dough

I get a kick out of the food and vowel exchanges across the pond! Buddy's pizza, with the original Wisconsin Brick cheese, has very crunchy edges and a more robust flavor than what mozzarella offers. The pans used are 10 x 14 x 2 3/8, the high sides allowing cheese to be piled on the edges. Good stuff!

I am a Michigan native and Detroit-style is definitely the best! I’ve recently moved to Boston though, and am still searching for it around town. I know it exists here, but I’ve yet to try any. You did it correctly with the sauce. Someone else mentioned spreading the cheese all the way to the edges-the crispy, caramelized cheese on the edges is my favorite thing about Detroit style pizza. I also like cheesy bread/breadsticks made in this style.

If you come to Michigan you may find another story that this pizza was invented by an Italian immigrant named Gus Guerra....he had worked at Buddy's as well and HE invented the Detroit Style Pizza. He opened a restaurant called the CLOVERLEAF Restaurant in, I believe 1956, in a Suburb of Detroit called East Detroit,...which has since been renamed Eastpointe. Pictures of Gus adorn the walls inside the Restaurant! Everyone I know who comes to theCloverleaf LOVES their Detroit Style Pizza. Their motto is "We Sauce on Top"! BTW Mrs H..may I suggest you run the sauce through a Blender for a few seconds next time to chop up the tomatoes and make the sauce smoother. That's the way I have always seen it at the Cloverleaf! Regardless, you have done a Great job on the pizza AND Baby Elana was a Great Help...and a Very Sweet addition to the process too!

Mrs. H great video. You're on the right track with pizza dough. Beautiful. I was born in Detroit and grew up with this pizza. You can imagine my surprise when I moved to Florida and ordered a pizza that was delivered was round and thin. Yuk. Next time use olive oil to oil your pan. After your dough has risen in the pan add pepperoni on the raw dough, cover that with the cheese, then cover the whole pie with the sauce. Its not a mortal sin. On the sauce add whatever veggies you like. I always added green pepper, chopped onion and sliced mushrooms. The pizza dough is sizzling on the bottom in the olive oil, as the pepperoni is cooking and melting its fat and spices into the top of the dough and the cheese is melting onto the sausage, it's complete Nirvana to the taste buds. " You're on the right track to 8 Mile and Mack" with your pizza dough. That ditty was part of a Detroit commercial from back in the day. Have a wonderful day.

I love little fishing boats ... and the feel of salt spray ... and the smell of seafood restaurants cooking for hungry patrons ... and the view out over the bay. Contentment. Even if your job was a tough grind and tourist traffic was maddening, I imagine the amenities of location could make things better. In contrast, the place where I work, the view out the front is looking at the back of a gas station. 🙃

The real secret to Detroit Style is in the special pan that is normally used. It's a deeper pan and the design causes the cheese to cook on the outside edge giving it a thick crisp crust along with the thicker airy dough. From a Detroiter I must say you did a good job considering .

This is my favorite pizza to eat and to make. I love that the sauce is just on top like that. I learned that the 2 stripes is tradition to honor the racing stripes that were on the Ford that beat a Ferrari whilst racing. I know f*** all about auto racing, but because this pizza originated with auto workers in Detroit, they did the 2 stripes as a tribute. fyi your creation looked delicious!

My used to make homemade Detroit pizza when I was a kid & she would put a very light coating of sauce over the entire pizza, add cheese all over, & then do the 3 strios of sauce along with any toppings we liked. As a Chicagoan, I can honestly say we don't eat deep dish that often. Most of us eat thin crust/tavern style cut in squares. Bars used to give it to the patrons on a bar napkin. One piece at a time. Started out as a snack that was free as long as you were drinking. lol

I tried making pizza at home for years and the crust was always a hit or miss until I came across almost the same Detroit recipe you made. The crust comes out perfect every time. I spread the sauce all over the cheese and add my favorite toppings. I also recently started coating the pan with melted butter instead of olive oil. Both work great but I prefer the butter.

I've lived here in Michigan (including in Detroit at times) for many, many years now. You did a great job with that pizza. Usually the pizza only has two stripes of sauce and that's because it's in homage to Ford motors when Ford beat Ferrari in Le Mans with the GT40. The hood (or the bonnet, as you would call it) had two stripes. Awesome video. Baby H is a sweet, little doll baby. :)

Fun fact, Detroit metro is home to Domino's, Hungry Howie's and Little Ceasar' and Jett's pizza. Jett's is as close as you can get in a franchise pizza to Detroit style. If you come to Michigan, Buddie's pizza is great.

It may just have been the old traditional recipe you found, normally for Detroit style pizza you will see the sauce just spread on the dough, and then the cheese on top all the way to the edge. You shouldn't see a 'crust' around the edge. Also, the pan itself should be well oiled before you spread out the dough, you want the bottom of the dough to fry and crisp up in the pan. Spreading the cheese all the way to the edge of the pan also gets you these lovely browned cheese bits around the edges and it's really really nice.

Detroit style is my favorite pizza! I typically spread my sauce first, then top with sausage, onions, pepperoni and then top all with cheese. That’s just a personal preference, but I think you did make it the authentic way. I just adore the crust! A little tip..sprinkle a little cheese on the top edges of the crust. It will get crispy and cheesy!

I think a Kitchen Aide stand mix crowd source fund is in order. I saw them on the Amazon UK website - Mrs H can shop for her model and gift cards can be purchased and sent via their email address ; then the H’s baking ingredients will double (😂)

Good attempt. Though a fail by not using a tall, sloped wall skillet. When the dough is spread to edges, need at least 4-5cm extra. The cheese is then laid out to the wall, when it melts, is runs down, is fried into the bread crust going down to base of pizza. Lodge makes a great rectangular cast iron pan with perfectly slooped walls. Walmart sells then. Pick one up in April!
