Haiyaa sorry niece and nephew Uncle Roger make mistake. Dum is cooking method, not cooking vessel. Uncle Roger got confused because I don't speak the language. I just assume when people say "dum biryani" it mean what they cook biryani in. But that wrong assumption

They are yelling bcz, in the beginning of their channel they didn’t have a quality microphone to record their voice , so they had to make sure their voice is clear to the person who wathching the channel. But at the present it became something unique about their channel 😌😇

This is the most ancient and traditional style of cooking Biryani! Restaurant style is definitely different and not as tasty as this one. The best part is after such grand cooking, they serve it to the Old Age Home people (who are abandoned by their children or kicked out of their own properties because of family feud, very sad situation for the elderly these days) in a village in Tamil Nadu, India. Message them on their thread and find out where they are located. They will welcome you with open arms to their village! It would be excellent to see you devouring their lovely cuisine.

Well I'm a North-east Indian, the chefs in video are South Indian. Each part of India have their own culture and a way of living, shouting is just a way of showing compassion, excitement and joy. I do understand it's kinda overwhelming and they seem aggressive, but trust me on this, South-Indian are very friendly, humble and welcoming (It's is really easy to create a bond with them, Also fun fact they speck better English over Hindi Including elderlies).

Exactly, you said it right! It's an expression of passion and excitement especially in rural Tamil Nadu. Yelling is not always a bad thing in rural India generally. But I'd forgive Uncle Roger because he didn't really have any other opportunity to make a joke in this video so he took this one.

I'm not sure if I'm just an ignorant-ass white American but I've always always admired the no-BS attitude of Indian culture in general. Food is flavor-forward, movies are spectacle-forward, clothing is striking-color and design-forward; and it's all by any means necessary. I'd call it "practically creative".

The reason they're yelling is because when they started making KZbin videos they din have proper camera or mic. So they need to say every ingredients louder so it gets recorded properly. Later it became their trademark style so they does that in every video... Now they're the first youtube in India to use red V Raptor XL camera💥

8:22 there are different styles of making biryani. The one where you see white rice visible is layered biryani. The masala and rice layers are separate and need to be mixed before serving/eating.

It varies on where the Biriyani is made, not sure about how other countries or other other states of India do it. But it’s even different in different cities. The closest resemblance of that particular biriyani in that frame, I think it’s Pakistani biriyani, where there’s a white and yellow hue to the rice, it doesn’t have much in terms of spice, and the best part of it all, gives you a huge insulin crash which enables you to sleep like a baby later on

I'm from Tamil Nadu, India, from where this channel is from. Actually the side dish they are having is Brinjal Gravy for Briyani. It is a traditional side dish served with Briyani along with Onion Raita. The brinjal gravy gives more spicy kick to the Briyani and Onion Raita (made with curd) subsides the spiciness so that everyone can have Briyani as they wish! ​@@nataschaadama9363 Hey let me help you with the ingredients and recipe Ingredients 250 gms Brinjal 1 medium Onions 1 medium Tomato Puree Salt to taste A Pinch Turmeric Powder 1 tsp Ginger Garlic Paste Handful Coriander Leaves Handful Curry Leaves 1/2 tsp Mustard Seeds 2 tsp Cooking Oil How to cook 👨‍🍳🍲 Wash, chop the brinjal into 3 inch pieces. Heat a nonstick pan with cooking oil, temper with mustard seeds, curry leaves. Then, add finely chopped onions, saute well till done. Add ginger garlic paste and saute well. Next, add the tomato puree, salt, and turmeric powder. Cover with lid and let the tomato puree get cooked well. Add the brinjal and mix. Cook for a couple of minutes and then add the dry roasted powder. Continue cooking on low flame till oil separates. Add 1 cup water and bring to a boil. Garnish with finely chopped coriander leaves. Serve with biryani.

2:27 Dum aint a cooking vessel uncle roger, its a cooking technique. Meaning to slow cook the food in a sealed vessel, with heat from the top using the hot charcoal from the fire or any other form of heat to ensure complete cooking.

dum cooking is when food is cooked by circulation of steam... that's why we need a properly sealed vessel, but in this case, as the vessel is so huge, there is much more steam inside than what is escaping. And heat from above is necessary only when the steam takes time to reach the top as they form water droplets on the roof of the lid.

On the contrary we boil our rice(from where I come from) , pressure cooker doesn't give that great a consistency. Pressure cooker rice tends to be stickier.

The problem is cultural difference. Indians in general are loud people especially in their close circle. Most foreign culture hate being loud... maybe only Americans enjoy it. Even Brett Lee who is otherwise considered friendly towards Indian and even starred in an Indian film called Indians being loud as their 'beastly' nature. Not to mention one of the most famous Britis Prime minister also called Indians as 'beastly people with a beastly religion'. Japanese are also a similar culture with too much norms and regulations making them unable to appreciate Indian loudness.😂

It is mainly a cultural thingy. Japanese and many European cultures are really silent while Indians within their group and close family are quite loud which most culture do not appreciate. This dish is VERY similar to a dish here in Colombia called Lechona, it's basically the same process but with pig instead of goat and it's kinda sweet instead of hot. Also instead of tearing the pig apart, it's just the skin and they just cut the pig like a cake with the rice filling. I'm a vegetarian now but it was delicious.

Dum is not the vessel. Dum means "Pressure" - It is a cooking technique where the vessel is sealed to induce "dum" over a low flame. :) Edit: OMG Uncle Roger acknowledged my comment! 😁

They are maintaining cleanliness because they are doing it for charity, for feeding the poor or orphans. Charity in India is a gods work so even those street vendors when doing charity will be clean. So only when they are feeding the rich, they won’t care of hygiene. It’s kind of like this, when you do charity, you are serving the gods through the unfortunate, so if you serve god unclean food so something that you won’t have yourself then the gods will punish you. Gods in India can punish you throughout your living life by making your life hell, they can punish you after your death by sending you to Narak(hell) and they can punish you in your next life by reincarnating you with a poor life, like giving you a life of an ant or a mosquito or a worm, or a human life(if your sins are not that bad) where you are disabled or poor or just unfortunate life in general. People often say things like “they must have done a lot of ‘punya’ (good karms or opposite of sin) in their past life that they have such a fortunate life” if they have a good life, or are talented or something and vice versa of the unfortunate ones.

In India, the regular common people don’t eat street food for their meals, we eat at restaurants that are government licensed and have safety standards. But the street vendors are the only ones that seem to be famous because compared to the rest of the world, there’s a lot of street vendors in India, that’s actually because we have the largest population in the world, and if you go to towns and cities with lower population density, then there are very few street vendors there, only that no tourists go to those cities or towns because there’s hardly any content there. On a side note, India has some of the smartest and strongest people and sharia law can never come here, muslims are afraid of people of every other religion here, because we don’t take your BS, we retaliate hard. Maybe The west should learn from us and together we can put and end to this infection called muslimism which everyone knows is way worse than unhygienic street food.

Uncle Roger, India has multiple types of biryani, like Kolkata biryani has egg and boiled potatoes while Lucknowi Biryani doesn’t. Likewise there is Malabar, Sindhi, Hyderabadi, and Kashmiri biryani. Similarly, the uneven coloured grains of biryani is actually the way it is made in a lot of places. It’s not because of not putting enough spices, it intentional to have some rice grains the colour of saffron and some grains to be plain. Hope this niece made it clear haiyaaaaa 🤝😂

Yepp... In fact, in a perfect Lucknow / Kolkata Biryani, 'half' the rice should be plain, and the other half coloured with saffron. And the meat (Chevon) 'must' be falling-off-the-bones tender. Hyderabadi Biryani doesn't even count because you'd need the 'gravy' to add the required 'moisture' and the 'raita' to cool off the 'heat '- not what a 'Biryani' is supposed to do to you in the first place. lolz 😀

I'm Indian, and I'm here to tell Uncle Roger that there are different kinds of biriyani throughout the country. This video is from the southern side. We have, Awadhi, Mughlai, Kashmiri, Hyderabadi, Kolkata and many more types! Surprisingly enough they have their own tastes and they look different too! Uncle Roger must explore all the types! I’m glad you liked it uncle Roger . This place is Tamil Nadu, India close to my hometown. You should come to hardcore Indian cities like Madurai , Thirunelveli , Dindugal … you’ll find real biryani. Also more than Basmati , seeraga samba is the king of biryani rice . Once you have biryani made out of Seeraga Samba rice you’d never go back to Basmati rice.

Hi, in India there are many versions of biryani and when biryani is cooked on direct fire you do not seal completely there should be some space to escape extra steam or else it will explode other methods of cooking when you cook on tawa or coal or any indirect fire then you have to seal it completely and steam shouldn't get escape. I am not good at English but I hope you might have understood.

Nigel, the lid isn’t dum. The process of steaming/cooking with sealed lid is dum. (Dom in Bangla) Lid is just lid, I don’t know what it is called in their languages. In Bangladesh, we call it "Dhakna" meaning "Cover/Lid"

Tho i have stopped watching Village cooking channel, but They are one of the best people.. They make food in large quantities to donate to poor old age people, orphans etc.. And yeah they are south indian, they generally are very excited and hence speaks very loud . I love them

6:53 Uncle Roger, Just want you to let you know in india there are variations of biriyani making, you may notice they have almost closed the lid hence the steam escaping but that's how the traditional biriyani (we call it dum biriyani) is made since the village folks back in those days they didn't have any western equipment like the pressure cooker to make the dish. The one you see with lid closed using refined flour batter, that's the north indian signature biriyani.

Stuffing the goat with rice is something the lucknow chefs practice as well. Especially when mutton biryani is prepared for wedding
