Muddy Buddy Truffles🍫Keto/Low Carb/Diabetic Friendly Recipe

😮NOPE, I DIDN'T DO THE MACROS🤣 but here's the full recipe👇
🍫Muddy Buddy Truffles:
2 cups ground pork rinds
1 cup peanut butter
1/4 cup powdered swerve
1 tsp vanilla extract
*mix together, roll into about 20 balls, chill 1 hr
*melt chocolate (9oz bag) & 1 Tbsp coconut oil in 30 second increments, took me 1 min total
*thoroughly cover Muddy buddy balls with chocolate then chill till chocolate sets
*cover truffles with powdered swerve
*place in air tight container & store in fridge

If you store your natural peanut butter upside down, the oil won't collect on top. When you turn it upright to open, just give it a couple of shakes :)

Looks great!! Last year I made some chocolate clusters. Just mixed up some melted Lily’s chocolate chips with your favorite keto cereal and some nuts. Drop on wax paper and chill in fridge. They were awesome, will make again to help me resist other goodies!

These look so delicious Think I will make half chocolate and half white chocolate. I know you shop at Walmart quite often so was wondering if you have seen the Bake Believe keto friendly chocolate chips there. I like them much better than Lily’s and I love that they use stevia leaf extract the least. Stevia causes me to have migraines so finding products that use alternatives is extremely important to me.

Kristi, I made them with Almond butter adding 1/4 tsp salt to the butter. They were terrific then I decided to add unsweetened coconut chopped fine in the processor, absolutely delicious. There is no end to what you can do with these!!! My Ferrero Rocher cravings have been satisfied! After freezing the balls, I just place them all in a plastic container with the powdered Swerve and shake, place back in the freezer!

I am doing one set with creamy PB and another with crunchy 😋. I think I will coat with Peppermint Lillys chocolate and use a Peppermint extract instead if vanilla.

I would add a half cube of melted butter to the peanut butter. That’s how you make those peanut butter balls Yum.

I call them muddy buddy's! I would chop peanuts up if you only have creamy peanut butter. I personally buy both Crazy Richards creamy and crunchy peanut butter.

These are amazing! This sounded way more appetizing using pork rind crumbs and mixing with peanut than the one that uses pork rind chunks and coats them in peanut butter and chocolate. So delicious and easy to make.

The app I use says in the whole recipe there is Protein:157.4g, Net Carbs 15.4g., Fat 2.46 g. For 1/20 that’s. Protein 7.9g, net carbs 0.8g, Fat 12.3 g.

It says a 9oz bag, so a little over 1 cup. There is 8oz in one cup. Or you could use a food scale. I never have a full bag of chocolate 🤣
