The carrot one would also be interesting with cumin / coriander instead or cardamons . As carrot and cumin / coriander soup for example is a very good match . Will try it .

Three remarks... @5:04 indeed, i've noticed that you also used a (more or less) similar technic about 2 years ago with the isomalt sugar you used for the carrot tartelette in "Fine dining pumpkin bite (with orange and ginger)", only you also added a bit of potato starch here too. Secondly, and this is off topic. Out of all your vids, i think this would be my top 5 favorites 1) Brown butter fried cauliflower dish (tried it, blown away by how good it was and i'm not even a fan of cauliflowers) 2) Fine dining red mullet with bouillabaisse and carrot ( i remember harrassing you for at least 1 dish feat a red mullet, and i was not disappointed) 3) One ingredient dish using only Onion. Not the most complicated but blown away by your creativity here. (the other 1 ingredient series are also amazing) 4) Best foie dish ever! Goose liver cremeux with fermented blackberries. (your best desert imo, even though i especially loved the one you did with the Bailey's) 5 ) pommes paolo (maybe not your most complicated creation, but that's how i discovered your channel..so it'll always have a special place ;) Finally, @8:41 You know what's coming. i don't think you'll ever bother but i'm leaving you this vid and hope that it'll somehow convince you lol... kzbin.info/www/bejne/rn6zg3eVprySn6c (fast forward to 12:58 for the michelin gnocchis).. Hey chef! I tried making them using first method but mine always turn our chewy and not solid. I used corn starch instead of potato starch. Is this the reason?
