I make mine with tomatoes, bell peppers, mushrooms, black olives, (if I have any on-hand) and one of the cheeses you mention. I also make my one omelet using the same things for this.

My wife makes a similar egg scramble bu enough for four days. Just put in in an air tight container and scoop out the daily portion and heat in the microwave

I have tried almond flour tortillas those were not to good since the vendor added material. I will try the ones you recommended. Today thinly sliced apple with a British coastal cheddar. Sometimes a slice of bacon added.

that won't work in Texas-- breakfast burritos need eggs, cheese, sausage, cilantro, picante sauce--- and tortillas

I was thinking the same thing. But we have zero net carb tortillas and we can do all that in a burrito. Make your own salsa instead of picante sauce. If you don’t have heart issues use some lean pork sausage. If you do have heart issues use turkey sausage or even soy chorizo. I like some refried beans and avocado with my eggs and soy chorizo. And salsa verde on the side!

I can't eat anything from a frying pan anymore. It all makes me sick. And that's using butter or olive oil. That frying process just does something. So I have to bake everything. I think it is still work though
