Vito my friend, i found your channel last year and since then i went from a guy that never knew how to make pizza to a guy that now makes a very good pizza neapolitana (always improving) and every weekend and sell to friends and family. After witnessing the skills of this master in person in NYC, and having the ability to ask questions, make a pizza with him and learn from him over the years my RESPECT has gone up another 100% 😆. Love this one just as much as the prior video with no words.

Vito's pizza dough from poolish is the first ever recipe to come out just perfect for me. Unfortunately, I'm too far away from my brick oven by this dough is so good it also works for home oven. Yeah, you'll need a pizza stone, pre-bake pizza before adding toppings, drain mozarella overnight and make other precautions so the pizza will not get soggy... But the result is really really awesome. The only thing which is the hardest -- is to make yourself start the dough a day before so it will ferment correctly. But time is everything... And the stretching technique ... damn it... that is my kryptonite :D

Hey Vito! Been watching your vids for quite a while now and I’ve learned a lot! Just a suggestion. You undoubtedly make more pizza dough in a week than I’d make in my lifetime and from the videos I’ve seen you use a ton of non reusable plastic wrap as a cover. It would be nice to see you switch to something more environmentally friendly like I’ve seen on other channels. One example that’s available is like a shower cap that will fit snugly over a bowl. Every little bit helps!

Perfect video, Vito! You present the daily routine of a pizzaiolo! I have one question: How do you manage the dough balls on the final day? I mean, some pizzas will be cooked some hours later than the first ones. Do you keep them in the fridge or in RT all of them? Hey Vito, I've hit a snag with making multiple pizzas consecutively. Although the oven floor initially reaches temperatures above 400°C, it quickly cools down at the bottom after baking a few pizzas. As a result, I have to wait for it to reheat between each batch, causing delays for our guests

Dal Piemonte Italia ti dico Caro Vito sei un Grande Super numero 1 Grande italiano ape food 😂😂😂 Bellissima. In simpatia senza offesa terrunnn. Ma in senso buono perché questo tipo di realizzazione di mezzi da cucina si sono persi. Mi ricordo che da bambino passava con ape 3 ruote un signore che vendeva gli arancini in inverno.
