We all too often overlook the wealth of nutrition available in the wild spaces that surround our urban living space.
Wild singing nettles and wild garlic ramsons are two great wild food resources we can put together to make a healthy and delicious pesto sauce.
In this two video series I demonstrate how easy it is to forage for and make this amazing pesto from mostly gathered wild ingredients.

Yay Pete I thought that I was the only person who loved my nuts or grains kept chunky in foods. I even prefer to have chunks of ice in my smoothies and milkshakes. Great demo on the pesto prep which shows we can use a variety of edible materials to create culinary delights 😋

@@LazyCookPete Yes chunky peanut butter it is 😂 No quick grits or oats, and course corn meal for cou cou, coo coo/ polenta recipes.

I love pesto very much. Your pesto has a pretty nice colour. The green is so fresh, I am sure it taste really well. Fantastic, Pete!

Thank you so much Fiona. The bright green is the result of just scalding the nettles, not cooking them. Scalding also preserves a lot of the nutrition. Stinging nettles have several times more vitamin C than fresh oranges have.

This pesto looks absolutely magnificent Pete I never knew that nettles were so many times more nutritious than spinach, talk about a super food!!! The tortellini looks awesome my tastebuds are tingling, shared!!!

I usually make it using only walnuts Sue, but this way is a little more expensive. Very tasty though 😋

That looks great Pete. knowing my background you'll realise I've eaten my fair share of both your delicious ingredients, but not made as a pesto. You might find it strange, but in 25 years in Spain I've never seen nettles growing and I live right in the campo (countryside). regards to you both.

Ramsons are any leaves...I haven't ever heard of. Once I have made pesto sauce using basil leaves. Indeed making pesto in a mortar has more authentic taste but in mixer grinder it will give a nice texture. Cashewnuts will give a nice body to the pesto and adding lemon juice a little tanginess. What a great twist of adding some freshly crushed black peppers. Hope you enjoyed it ❤

Thank Ritu my dear friend. Ramsons is an old English name for a type of wild garlic (allium ursinum - so named because it was a favourite food of bears!). Traditionally in Italy pesto was usually made from basil of course, but even in Italy other green leaves are sometimes used. I like to get creative with pesto ☺

Personally I'm not a huge fan of pesto but that did look good and it would definitely have it's own unique flavour with the nettles
