I'd say we share more similarities with tex Mexicans because our culture and heritage is more similar than we are to Mexicans lmao. Yes both cultures share similarities ( a lot ) with Mexico and other Latin American countries. It probably has to do with the fact we traded a lot, spoke the same fucking language, and had various amounts of migration (not a bunch to New Mexico from the south lol). New Mexicans aren't Mexicans not do we share significant ethnic ties other than having Spanish descent. New Mexico was colonized by Spaniards and some laborers from Latin America. This settlement didn't even last and the 2nd time they relied on enslaving the indigenous populations of the area. So Navajo, apache, pueblo, etc. And assimilating them. Just like the aztex/mayan-spanairds mestizos represent a massive portion of Mexicos population (the other largest being natives and Spanish ethnicities) the mestizos of the Spaniards and those tribes represent the mestizos of New Mexico. Of the time is was mainly Spaniards, Genizaros (New Mexican Mestizos), and natives of various tribes. Not Mexicans lol.

🤭I rolled my eyes to the back of my head when she said, "Mexican food is sweeter"...🙄...what kind of Mexican food (excluding desert) is sweet? The flavor profile for Mexican cuisine has a distinct taste that's comprised m of a few common ingredients. That spicy flavor is due to things like onions, garlic, chile powders, herbs, spices, and a few that are specific to this style of food. Sweet doesn't really feature....just my opinion

Mexican food is not sweet. Not sure what her taste buds picked up on. I find NM food to taste earthy with an umami that can run astringent. Mexican food is more herbaceous, bitter, tart and smoky. Either way, they're both good to eat. Let's not fight; let's eat! 🌮🌯 😍

I’m Mexican but grew up in New Mexico, and I think NM food is nasty and nothing compared to real Mexican food. The chile lacks flavor and spice, and the texture looks very soupy and bright red which just looks like tomato sauce. I also hate how they use american yellow shredded cheese rather than creating their own. But hey if they like it, then that’s fine.

Googled "New Mexican restaurants Santa Fe" and then "Mexican restaurants Santa Fe." Basically the same list of restaurants comes up. Isn't New Mexican cuisine a regional variation of Mexican cuisine? Don't the similarities far outnumber the differences?

Born and raised in New Mexico, and it’s not Mexican. New Mexican food derives mainly from the Natives in New Mexico. We learned how to make our Chile from the Pueblo Indians. That’s why it’s so unique. Everything about New Mexico culture is unique-our dialect, our food, and our New Mexico music! I love my state!

I'm Mexican and my husband is New Mexican. The difference in the food is that Mexican food is a lot more versatile and we use a plethora of different types chiles (serranos, jalapenos, anchos, chipotles, arbol just to name a few)and recipes that date back to the Aztecs. Mexico is an big country with huge variety of food. New Mexican food on the other hand has only a few staple recipes and they only really use their hatch green chile and their red chile which is like one type of chile. Plus they are just one state not an entire country. I personally prefer Mexican food like mole (which New Mexicans do not make) and discada, carne asada and tacos de birria. My husband as you probably guessed prefers the New Mexican style of tacos (mostly hamburger meat) and the sopapillas. People normally like the food they grow up with.

To further your point, one has 60 times the population and 6 times the landmass. It would be like saying "Sonoran food can't compare to the culinary versatility of the entire U.S.". It would be an ill-concieved comparison from the beginning. A better comparison would be New Mexican vs Tex-Mex or New Mexican vs Chihuahuan.

I grew up in KC where my family regularly dined at a couple different family owned Mexican restaurants. So I grew up on that, but I do have to say that I completely fell in love with green chile. My husband doesn't like it, so many of the things I actually cook at home are Mexican or possibly a hybrid when I'm doing something with red chile (or at least as close as I can discern). I have many types of dried chiles in my spices to give the heat/flavor I want to a dish. I do know that I don't cook Tex-Mex which is pretty much all that's available here in the more rural Texas area I currently live in and most of the time, it feels like it's lacking in aromatic flavor and usually is so mild that Taco Bell has spicier food. I don't really want my food to burn my taste buds out (and I have had that with New Mexican red chile), but it should have a bit of heat to it.

Oaxacan food is totally different from food in Guadalajara, for instance. I've never tried Sonoran food, though. I've also heard that food in the Yucatan is entirely its own thing, too. The question remains whether or not New Mexican food is really a sub-variety of Mexican food, or its own distinct cuisine...what would people in New Mexico say about that?

New Mexico is MEXICAN food do you all not know the history of New Mexico being Mexico prior to being stolen from the USA? We are colonial Spanish land. Their are different varieties of Mexican food you don't need to be south of the border to be considered authentic Mexican food. Learn your history of NM you'll see what I'm talking about. We are as authentic as it gets.

@@AC-kl2gf Mexican food is not one monolithic kind of food their are variations of Mexican food. Mexican Food from Cali, to Jalisco to New Mexico to Texas. It does not mean it's less authentic. Food you find in Chihuahua might be different then food you find in Mexico city. Again all different VARIATIONS but it's all Mexican food at the end of the day just different variations.

No its different. New Mexican cuisine began before mexico was even a country with influences from Spanish and native cuisine. And it continued to evolve after new mexico became part of the usa with an Anglo influence. New Mexico has been part of spain, france, mexico, the us and many native nations over time. The food today is new Mexican, influenced by all that history, but it defently doesn't belong to only one of those historical owners.

Blue corn straight up comes from indigenous mesoamericans in the center of Mexico, green Chile is just a northern type of Mexican dish its not “New Mexican” in origin

Even signing agreements to allow their people back to Mexico if they got caught in any of the ongoing slave trade. Just like Mexican cuisine it's a mix of the area and Spanish cuisine. Most of those differences between Spanish and Latin American tribes are the tribes they mixed with and the areas they were in. You had aztecs. We had the various pueblos, Navajo, apache, Comanche, etc. So holy crap.... yes, there is a difference. The cuisine can mainly be associated with the interminglingly from trading and the very small amount of immigrants from Mexico lol. This wasn't Manifest Destiny for Mexicans lol. That's why they gave our land to the U.S.
