IMHO better then Netflix. We canc’d mths ago and cut cable yrs ago. Too much better free on YT, Daily Motion, Acorn etc. Comcast unit costs ~$50 CAD and can be moved to any TV screen. Cheaper then Amazon fire stick/Prime and no temptation to buy things at a click. Husb also found good source to rent/DL books on Kindle (free.) We’re not cheap just trying to add to savings/investments now. We’re a bit boring and crazy that way. 😉😬

I know why the lemons were incredible the year after the freeze! Once upon a time, I dated The Plant Geek. He was getting a PhD in horticultural studies and his dissertation was about using drought and flooding to increase production on tropical fruit. We had a mango tree that NEVER gave us mangos in the ten+ years from when it was planted to when we moved out of the house. We’d loved it and given it the very best of the kitchen scraps. Then we sold that house. We visited it for an open house after it was renovated. The mango tree was COVERED in plump fruit! He explained to me that fruit trees need to be scared to send out their progeny-their fruit. We coddled the tree, but the new owners did not. She got scared and gave forth fruit! Aren’t we all like that? So, that freeze that killed one season’s lemons also forced the tree into survival mode, which is why the next year was incredible. And it’s why commercial growers use flooding and drought to trick fruit bearing plants and trees to increase their output.

I recall reading advice the old farmers almanac when i was a kid (in the 1970s) about ‘beating’ a fruit tree that didnt produce. Taking a board or a downed limb or baseball bat and hitting the tree a few times and allowing the bark to be slightly damaged. Next season, the tree would produce. The advice was sort of ‘what the old folks say. Sounds silly but worth a try!’

I agree the drone pictures were just beautiful. I think the kitchen mini reno will be perfect. How good is Carlo making the existing cupboards. He is worth his weight in gold! You seem to spend a lot of time making Pasta and the bench will be a far better height for that job.

I like to watch tv when I am sitting at my kitchen table doing prep work. I don’t have the views, the tv is in the other room but I can see it perfectly, I need to turn it up a tad is all. My house is only 953 sq foot, has one bathroom, a single car garage where my washer & dryer are, one bathroom. Nice sized yard with a beautiful garden. It’s been paid for three years now so that’s why we decided to get busy finding our retirement home up north in Florence, Oregon. Quite a adjustment weather wise but very beautiful regardless. Minutes from the beach, woods, lakes, rivers etc.

Right now I’m dreaming of going to Sorrento, and having day trips to Capri, Positano, and Amalfi. I can’t wait for the world to heal, so that we can travel again! 😔

I love this video!! Carlo, of course, is a charmer even when helping out as a cook! His son, is so handsome and he's a chef! I did get that right, I hope?? I want to know everyone in your family properly. Some lucky girl will catch him soon!👍The pasta looks delicious 😋 yum yum!! I'm sitting here in the hospital cafeteria, sipping coffee and thoroughly enjoying this video and feeling like I'm actually there!!! Nicki, I have to thank you so much and Carlo and your beautiful family and your animals because as an exhausted hospital worker to see life in the people, the animals, the gardens gives me a break from the heartache of my work. Gotta love a guy who can do anything with a few tools! My dad was this kind of guy. Secret to great Italian dishes- a few fresh ingredients, maybe one’s own twist to a recipe = a great Italian dish!

Oh Nicki, how many of us just dream of getting that reaction when we want to start a project at home! 😂 ❤️ On a different note, the spaghetti is also nice if you replace the meat with salmon and add a bit of lemon juice. I am sure Carlo, along with probably most Italians, will groan at this and say “no, No, NO!” and I have to agree the traditional way is best, but if you prefer fish.....

Agreed! I do give credit to my guy too. He’s not as handy as Carlo but willing to look things up on YT and try. Because of my health he’ll also do all food shopping, errands, cleaning, cooking etc if needed. Not the way I would 😉😬 but pretty good. I fell down basement stairs this summer and shattered my ankle and damaged back/hip and he’s been so good esp w/meno on top 🥵🥶. Nicki’s videos have been a huge help. Husb watches to get some ideas from Carlo! They’re bdays are close! 🧐 We know other men the same and my dad was too. They do exist promise.

@@jmc8076 You are still so lucky. A friend on ours fell down her basement steps and died. Hit her head. I am so careful on steps now. When I see how many steps NIcki goes down my heart jumps. First thing I would do if I lived there would have railings installed on all stairs. Either that or go down them on my bum, then up on my knees, crawling all the way. Would take twice the time to get anywhere. LOL Talk about good exercise.

Cool drone video, nice! Love the idea for a kitchen renovation, yes, you need more counter space. Thank you to Tomaso for giving us a cooking lesson and prepared and cooked as it should be. This is better than any travel show.....can get lost for hours watching these wonderful uploads. I love watching the food being prepared...the garden work , chickens and rest of the animals (being given a wonderful life) The scenery leaves me gobsmacked everytime. Thank you for letting us viewers escape (i live in Manchester....enough said)

I follow a much beloved Italian American chef here in the states, Lidia bastenich she taught us about the pasta water. I love her, she has wonderful cook books. She has a wonderful salad much like one you showed us, hers was julienned sweet green apple and carrots a orange juice and olive oil,salt and pepper dressing. Delicious! Great on a warm summers day because there is no Mayo to go bad. I can’t take too much Mayo at all, it’s rather gross but it does have its uses I suppose in small doses. That’s just my opinion of course.

I remember stopping at this exact bar and grabbing a dessert when I was there !!!!! I am amazed how the dog just follows you off leash to town and how much exercise she gets up and down those hundreds of stairs.

LOL! @ Naughty chicken, always wondering off from the chicken coop. All your animals are superstars on your vlog, Nicki. You have: your kitty, Not my cat, Naughty chicken, and Holly "The egg inspector." Saw an episode, where Holly had stolen an egg and you went looking for her and the missing egg. I almost cracked a rib from laughing so hard.

Extending the counter around is a great idea! If you have the room and could make it wide enough for 2 chairs on the end, you wouldn't lose much seating, if any. You could have a closed cabinet under the addition too. I'm loving the drone footage and want to compliment you and Carlo on your photography skills, you share the most beautiful things. For instance, I probably wouldn't have ever seen the inside of a Positano lemon! Thank you so much.

Hi Nicki, I’ve only recently found your channel so I have tons of catching up to do .. but thank you so much for allowing us to come into your lives 😊 It’s a real joy to follow you and Carlo and his family, and of course your family when you go back to the UK. I’m actually from London and my dad from Cornwall, but I now live in Canada. My husband and I decided last year that we want to go to the Amalfi Coast as it’s a part of Italy that we haven’t yet visited, so when travelling is safe again that’s our plan. Once again, we’re so happy to have found you 💕

You can clip the chickens wings so they can’t fly out of the pin. We have a few naughty chickens ourselves. I would suggest searching it up to make sure it’s done correctly so that your clipping the right part of the wings. It only takes a few minutes and no more escaping chickens. It does not hurt the chicken at all. They will eventually return after the chickens malt which happens a couple of times a year.Hope this helps!

Was thinking the same thing - maybe even one wing, it is not brutal..I have a stray girl and she is happy to be let out but even happier when she can rejoin the flock to sleep...it is a balance at how much you need to restrain a hen.

I'm watching this video again for the third time, working on Tommaso's version of carbonara. The problem for us Americans: nobody does guanciale or pancetta like the Italians of Italy. The fabulous California company Framani does excellent pancetta, but it's not easy to get. And it's not an Italian product. I've yet to find a quanciale in the U.S. that comes anywhere close to what you find in Italy. If anyone knows, please respond. If these Italian products are available for export, only a few suppliers are granted permission, and they don't seem to be among the highest quality available. Total bureaucracy. Good knives, however, can be found in Italy, and given how much cooking Nicki does, I am shocked she does not have one or more great knives, the most important tool in a kitchen next to hands. I wish I could send her a gift to show my appreciation for her hard work on these fabulous videos.

I LOVE spaghetti carbonara! Except I am very allergic to dairy. :( And I don't eat meat by choice. Haha! So I have to use nut cheese and in place of the meat I use olive oil, salt, and a little smoked paprika. But otherwise I'm glad to see my process is the same!

Me too, I don't eat meat but I was thrilled to see the making of the 'sauce' with egg yolks and pecorino ( i am no dairy - but allow for hard sheep cheese ) for me it was the use of starch from the pasta water - something in the Amalfi coast they do when making fish dishes. Perfect!

I'm an American living in Sicily and my landlord just gave me a few of these giant lemons. Mostly pith, but wonderful if you need fresh grated lemon peel! :-)

when I lived in Korea, they all thought carbonara was a cream based pasta. I told my students there was no cream in it, but I didn't blame them, it's a country on the other side of the world. But I moved to France a few months ago, and I saw how the French "make" carbonara with a cream based sauce also, and I was like WHAT!!!!!!!!!!!!!? hahahahahhhahahahah. Nothing has confused me more that being in Europe and the European countries having weird ideas on what the other country's foods are, lol, I mean, the EU has been around long enough where they could have learned all that with the free travel and passage of goods between the countries, lol

We'll, what can I say. This vlog had a bit of EVERYTHING AND I THROUGHLY ENJOYED IT! Carlo, now I see how you are an ideal husband when you SO AGGREABLY said it was no problem to extend the granite kitchen. That is a huge job. What it takes to keep Nikki happy! My compliments to you. Wondering why you have 2 faucets and sinks? Also, how long has this house been in you family, it's age, and who built the enormous stone retaining wall and when? You have a large garden area, surprisingly, and you use it well.

Hi Miz, I'm Carlo, I'm not a genius, so I believe that everyone can fly a drone, I can tell you that it has helped me a lot to see many videos about drones, especially those explaining how to start flying, so you can get familiar with the commands, and as I mentioned earlier, I've made a lot of mistakes that I shouldn't have made in the beginning, and despite this, luckily at the moment I haven't dropped the drone yet. My drone is: Dji mini 2.
