Today, we're making a super easy and healthy Multigrain Bread! This recipe is perfect for those looking to enjoy wholesome and nutritious bread without the fuss of yeast. Our bread is made with all-natural ingredients, making it ideal for anyone simply looking to eat healthier. Whether you're a seasoned baker or a beginner, this simple no-yeast recipe is a breeze to follow. Get ready to bake delicious Multigrain Bread that's good for you and tastes amazing!
Ingredients:👉
2 cups whole wheat flour
1 cup oat flour (made from ground oats)
1/2 cup finger millet (ragi) flour
1/2 cup sorghum (jowar) flour
1/3 cup flaxseeds (ground into a fine powder)
1 1/2 tsp salt
1 tbsp corn starch
1 tsp baking soda
1/4 cup jaggery powder (or any sweetener of your choice)
1/2 cup water (for flaxseed mixture)
2 tbsp olive oil (or any oil of your choice)
1 cup yogurt
1 cup water (for the dough)
Milk (for brushing the top)
Mix of oats and seeds (pumpkin, flaxseed, sunflower, hempseed) for topping
Instructions:👉
Preheat the oven to 190°C (375°F)
Prepare Flaxseed Mixture: 👉
Grind 1/3 cup flaxseeds into a fine powder.
In a bowl, mix flaxseed powder with 1/2 cup water. Let it rest for 10-12 minutes until it thickens.
Mix Dry Ingredients:👉
In a large bowl, combine 2 cups whole wheat flour, 1 cup oat flour, 1/2 cup finger millet flour, 1/2 cup sorghum flour, 1 1/2 tsp salt, 1 tbsp corn starch, 1 tsp baking soda, and 1/4 cup jaggery powder. Mix well.
Combine Wet and Dry Ingredients:👉
Add the thickened flaxseed mixture to the dry ingredients.
Add 2 tbsp oil and 1 cup yogurt. Mix using your hands.
Gradually add 1 cup water and mix to form a soft and smooth dough. Add more water if necessary.
Prepare for Baking:👉
Transfer the dough to a loaf pan.
Brush the top with milk and sprinkle generously with the mix of oats and seeds.
Bake:👉
Bake at 190°C (375°F) in a preheated oven for about 60 minutes until the bread is golden and cooked through.
Let the bread cool completely before slicing.

Hey Swaraj, glad to know you liked the recipe! Cornstarch helps in making the bread light, airy and crumbly. If we don’t add cornstarch, the bread still be soft and light but not as crumbly as seen in the video.

there is something I don't understand: what is wrong with yeast? I searched for any reason to avoid yeast (cooked yeast I mean) and could not find it...

There is nothing wrong in baking a bread with yeast. I just prefer this bread over yeast bread because it’s easy to make and saves time.

Can we do without sorghum flour? And replace with oats or other flour ?

Though I haven’t tested the recipe without sorghum flour, but I believe it should work if you replace it with any other flour like oats/ ragi/ whole wheat flour.

I haven’t tried chia seeds in this recipe, so i can’t be sure if they provide the same texture as flaxseeds do.

It might take 10-15 minutes more. But I can’t be sure. Make sure to check it with a toothpick, inserting in the centre of the bread. If it comes out clean, the bread is ready.
