If you don't have or can't use your oven, you definitely should invest in an air fryer, which is basically a mini oven. Perfect when cooking for 1 or 2 people.

Up until 2 1/2 years ago, I had no choice but to learn to cook everything in a microwave oven. Now, even though I have a full-size stove in a real kitchen, I still cook everything in the nuker, just liking it better for its speed, ease, how much control I have, and I don't have to stand over a hot burner stirring things.

This was awesome. Very easy to make and gave me another dinner idea, especially for the microwave. I do agree that you should do some more microwave challenges or even a few episodes revolving around this piece of culinary technology. Hint hint hint. 😁

Get an electric burner. Sorry my family is from New Mexico, USA. And I couldn’t help but lol when I saw the enchiladas. It’s a typical way a gabacho would make them. I use to post on KZbin my grandmas authentic NM style recipes from her moms, mom and so on. You can still make it authentic with an electric burner. You can make home made chilé Rojo for the enchiladas. Or burrito because what you made looked like a burrito. Enchiladas has corn tortillas. You can make the enchiladas in a fry pan. Don’t ever use canned beans. No matter how you try to season it they will never taste right. They now sell cooked beans in a pouch from Mexico and they taste homemade and seasoned just right. Called Isadora. But we never put smashed beans in enchiladas! U can use whole bean if you want but my grandma would have never let ya do that!

Never would have thought to make homemade enchiladas in the microwave. I would skip the ground meat and use the beans as my protein though

I might have covered the beef with some parchment paper to keep it from splattering inside the oven and maybe have drained the liquid out halfway through and separated the fat from the juices and then mixed the juices with the enchilada sauce on the second cook. Maybe mince some of the cilantro stems and mixed it in with the beef. Didn't see the refried beans so maybe add that in with the beef before rolling. Otherwise, this is very clever. I use the microwave to cook veggies a lot - add a little water and seasonings and partially cover before and cook 2-3 minute increments until done. Most mistakes with microwave cooking is due to overdoing it. The key is to cook in segments until you reach the desired results.

Adding the enchilada sauce definitely was a good move. Since microwaves vibrate the molecules in food to create heat (mainly vibrating, and so heating the water molecules), adding the enchilada sauce seems to really have let the raw beef cook completely.

Only corn tortilla enchiladas for this lady. Fun video, though, I may even try that microwave ground beef cooking method. I have a very hot, stuffy, old farmhouse kitchen that makes me dread cooking right now.

I prefer the taste and tradition of corn tortillas for enchiladas, too. I’m thinking maybe lightly brushing the corn tortilla on each side with oil, stack them, cover them up and zap them until they’re warm enough to be soft for rolling. I’m going to try it!

Draining the water & grease from the beef after it was cooked could have helped. Also, not everything has to be cooked at 100% power in a microwave. A nice 50% power with the cheese and sauce could have more slowly melted it, although it takes longer. It lets the heat disperse.

corn tortillas are better for enchiladas, also microwave cooking with raw meat can leave colder spots where bacteria can grow. a safer option would have been black beans and corn enchiladas, or potato, or squash, or the combo of soy chorizo and potato(alot of flavor, cheap and filling}. also you dont put raw tomato and raw onions inside an enchilada. the onions are usually cooked with the meat and done with a smaller dice. jalapeno can be put into the filling in a similar way. either that or you make a little bit of pico de gallo with that tomato, cilantro, lime, onion and jalapeno to put on top after the enchiladas are done cooking. I dont know who came up with this recipe but they are clearly not Mexican.

It's perfectly safe to cook ground beef in the microwave. It's cooked pretty fast which doesn't allow the bacteria to grow and it kills the bacteria anyways. Also, of course it's not Mexican. He literally said that in the video.
