That sounds really good! I'd thought of frying an egg for each of the fritters, put one on top of each---but your idea sounds even better.

True, isn't it? Frankie's ideas make everything so appealing, and the economic aspect goes drifting off to the side because it's all still rather luxurious eating, even on a tight budget.

I could see frying a few eggs (I'm supposed to be eating 4 to 5 a day, but....) and putting one egg on top of each fritter, then a dollop of that luscious sauce on top of the whole package. Light meal that would still be rather economical, filling without pain of a heavy dish---yeah, it would work.

I love fritters- whenever we had a roast dinner or corned beef dinner would have have either “bubble ‘n squeak” or chopped meat fritters with the leftovers for dinner the next night!- usually enjoyed them more than the original roast dinner lol

Scallions? Don't you mean spring onions? I prefer the Scottish name...Syboes. (Pronounced as sigh bees.) 😄

These are actually scallions! Most scallions get mislabelled as spring onions but scallions always remain tubular in shape while spronions will grow into a proper onion bulb if given the chance!

@@hayleydid You say scallions, I say syboes. Two words of gaelic origin to describe the same thing. One of Irish origin, the other Scottish. As I grew up everyone I knew called them syboes, fruit and veg shops called them syboes. It's only when my family moved to England from Scotland that I saw the term spring onions everywhere. I know that due to the power of Irish migration that the term scallions was taken up by Americans. Strange that it didn't change the west coast of Scotland though. 🤔

Yeah, they're usually labelled wrongly in English supermarkets, what are sold as "jumbo spring onions" (with a small round bulb) are true spring onions and what are sold as regular "spring onions" are actually scallions, I was so surprised when I first learned that they're actually different things, but I always love learning about food so thank you for teaching me the Scottish name for them! 🥰
