Lovely. Here's my hot tip: I'm not a fan of quinoa but anytime I'm blending a soup I add a handful or two of dry quinoa when soup is simmering. When blended, I don't taste or notice the quinoa but it gives any soup a little body and I get the nutrients. Win!

I made the sweet potato bisque today, unfortunately, I couldn't find the Thai red curry paste, so I used curry powder. It was delicious. Great Idea to add the beans, makes it thick and creamy and has added nutrition. I will make it again after I find the red curry paste. I love blended soups. Thank you for the post.

Just made the sweet potato soup!!! I added a little bit of maple syrup to the top of the soup and I put some vegan butter and pepper on some sourdough bread and toasted it up in the oven! This is SINFUL, it’s so delicious!!! 💕💕💕

This will be perfect for you then! The tortellini gets super crispy in the air fryer and I put them on top of the soup juuust before serving so they stay as crispy as possible. I hope you enjoy!

I took Nikki's cooking class on IOA and really liked the way she talked about building flavors in food. Sometimes that's hard to do with vegan dishes, or people who aren't trained chefs don't explain how to do it properly.
