Oh, lovely Satoshi! I'm already looking forward to it. I happen to have an Okonomiyaki restaurant close by where I live in Amsterdam. Maybe you know it from your visit. They have many variations on 3 main Okonomiyaki dishes: Osaka, Hiroshima and Negiyaki. All of them are delicious.

One thing I'd try to get more waffle-ness would be to separate the whites from the eggs, add the yolks to the batter, then whip the whites into stiff peaks, then gently fold the whites into the batter before putting it in the waffle maker. That's the technique for a Belgian-style waffle which adds some more texture and crunch.

Sounds so good. I want to try making scorched rice with a waffle maker you take fresh cooked rice out of rice cooker and put in waffle maker and it is supposed to make a scorched rice.

This would be great in a bento :D I always add a bit of miso to my batter (desolved in the water). Sometimes you can find sachets of dried mountain yam powder in Japanese supermarkets in the Netherlands. I heard that finly grated regular potato also works to give it a fluffy texture
