This is exactly the recipe I was hoping to find for three reasons: 1. Creamy but without actual cream which so many recipes require 2. One pot and 3. Quick. As a disabled individual, I need recipes that I can pull together easily and cheaply. You provide me with so many usable recipes which I appreciate so much. Thank you!

I just tried your recipe, and it is as easy and delicious as it looked on the video. The only variations I made were to use chicken broth as I didn't have vegetable broth on hand. And also squeezed in a little lemon juice in addition to the lemon zest. Thanks for sharing; I've already passed this on to several individuals who I know will love this.
