In response to a viewer's request, I would like to share a recipe for sushi rice(vinegar rice).

Do you have opportunities to eat sushi rice (vinegar rice) in your country?
The culture of sushi rice (vinegar rice) in Japan is closely associated with Japanese cuisine, especially sushi. Sushi rice (vinegar rice) is made by mixing cooked white rice with vinegar, sugar, and salt, giving it a unique flavor and texture. This sushi rice is the foundation of sushi and can be enjoyed with sashimi and other ingredients in various forms such as nigiri sushi, chirashi sushi, maki sushi, and temaki sushi.

Ingredients
Pink Rice:
Rice: about 2 cups (360 ml) + approximately 380 ml of water
Black beans: 30g
Water: 100ml
Rice vinegar: 1 tablespoon per cup of rice
White dashi: 1 tablespoon per cup of rice
Sugar: 2 teaspoons per cup of rice
Salt: 0.5 teaspoons per cup of rice
White Rice:
Rice: about 1 cup (180 ml) + approximately 480 ml of water
Rice vinegar: 1 tablespoon per cup of rice
White dashi: 1 tablespoon per cup of rice
Sugar: 2 teaspoons per cup of rice
Salt: 0.5 teaspoons per cup of rice
Sushi nori: 4 sheets
Eggs: 1-2
Sugar: 1 teaspoon
Salt: a pinch
Shiso leaves: 2
Directions
①Place 30g of black beans and 100ml of water in a microwave-safe container. Cover loosely with plastic wrap and microwave for 3 minutes.
②Add the 2 cups of rice and the black beans with their water to the rice cooker. Then, add more water until it reaches the 2-cup mark.
③Cook the rice as usual.
④Crack the eggs into a bowl and season with a pinch of salt and 1 teaspoon of sugar. Make a thin omelette. I use two eggs, but one is enough. Once the omelette is cooked, cut it into thin strips.
⑤Mix rice vinegar, white dashi, and sugar together and set aside.
⑥Add the mixed vinegar to half of the cooked black bean rice (1 cup of rice). Amazingly, the rice will turn pink.
⑦Cook plain white rice as well, and add the mixed vinegar to it (1 cup of rice)
This rice will not turn pink
⑧Cut 3 out of 4 sheets of sushi nori in half horizontally.
⑨Using 5 half-sized sheets of sushi nori and pink rice, make 5 small seaweed rolls about 1 cm in diameter.
⑩Arrange 5 pink seaweed rolls side by side, with the egg in the center, wrap them in plastic wrap.
⑪Place white vinegar rice on the uncut nori sheets.
⑫Place 2 shiso leaves on top; if unavailable, it's okay not to use them.
⑬Place the pink seaweed rolls on top of the shiso leaves.
⑭Let it sit for a few minutes to settle and meld together.
⑮Once set, cut into slices to reveal cute flower-shaped seaweed rolls.
